Cindy's Note:  You can use spaghetti squash, rice noodles or even zucchini noodles.  I used linguini just because but also made it again and used spaghetti squash.  Very yummy!!!  

Spaghetti Squash - After I baked the squash and removed the strands then put in a bowl.  I added fresh ginger, salt pepper and chopped cilantro then drizzled a little sesame oil!  Amazing....

Sorry I took the picture before we garnished and ate!  We just couldn't wait.....

Don't you love One-Pot Meals?  I do and this is a perfect Everyday to Gourmet recipe! This is really a combination of a meatloaf and a meatball.

Well my husband was traveling and I invited my girlfriend Lisa over for dinner and I made her a meatloaf.  Well not an ordinary meatloaf but a beautiful Italian Meatloaf and I topped it with smoky thick cut bacon and I made a beef gravy which was perfect.

I made this in my braising pan which looked absolutely beautiful.

Everything can be made in one pot!  Enjoy

If you know me well...  Then you know how much I love my meatballs.  When I make a pot of sauce and meatballs it's normally a large pot.  Even though many Sunday's it's just for my husband and I. However, we LOVE the left overs.  I pack them in several containers and freeze some and keep some handy.

I had some perfect organic peppers and decided to stuff them with meatballs and rice. You can also use cauliflower rice (which is what I did).  You can get the frozen cauliflower rice at Trader Joe's - just love it!  All you need to do is add it to your mix...  If you are using rice (any kind) be sure to cook it first then add to the mixture.

During Blizzard Colbie I was home making a bunch of new recipes and after reviewing what I had in the freezer it was exciting to find a container of mini-meatballs and sauce that I made a few weeks ago. I always make extra meatballs and freeze some for later.  This came it very handy.

We were inviting some neighbors over and we all love spaghetti squash and since we were doing a buffet style dinner I decided to do individual servings of spaghetti squash with a mini-meatball nestled inside and it was a hit!  Our friends son Austin took the rest home!  I just love cooking for friends and family.  Make me so happy..  Not to mention we love having company and there were a few bottles of wine opened and the fire was going.  Then we all enjoyed watching our dogs playing in the snow!  

I am thankful and grateful everyday for all of the wonderful people in our lives.

It was my grandson Brady's 1st birthday and I wanted to bring something perfect for a buffet item.  I just love steel oats oatmeal and knew my soon to me daughter-in-law does as well and decided to make these.  

I didn't follow any inspired recipe it was make as I went along!  I did make 3 pounds worth so this is a perfect party meatball.  You can make them any size.   used a small ice cream scoop to keep them all the same size.  Enjoy
