Italian Spiced Egg Salad

I always have fresh veggies in the house and wanted something different to snack on during the day.  You can make this chunky and top a salad or enjoy a good egg salad sandwich. I chopped mine really small and ate as a dip with my veggies.  Egg salad is good anyway or just grab a for and eat it out of the container.

Enjoy xo Cindy

Italian Style Tomato Salad

A tomato salad was always my Nana's favorite. We would mostly have this for lunch. I remember her asking me "Do you want a tomato salad for lunch?" I miss her so much and treasure all of her memories.

Salmon Frittata

As part of my Cook Once Meals All Week series on Better Connecticut this salmon recipe works great with cooked chicken.  If you don’t have cooked salmon then use smoked salmon for this delicious recipe.  If you are making for brunch, lunch or dinner top with an arugula or Mediterranean salad (just include capers).

Enjoy this healthy and Paleo Recipes!

Thank you City Fish for the amazing salmon!

Spicy Vegetarian Pad Thai

I just love pad thai but when eating out its very high in sodium and that discourages me to order this dish.

I sometimes make it myself and since I had a container full of bean sprouts it seemed like a perfect lunch!

If you are looking for a paleo version then check out this recipe using zucchini. It's really good as well but today I felt like mixing it up a bit.

Enjoy! xo

Spinach and Smoked Salmon Salad with Lemon Dill Dressing

We are a very social couple and many times we have last minute dinner parties. Luckily I had all of the ingredients handy and created this delicious salad and again it looked gourmet but took me under 10 minutes to prepare!

*CHEFS NOTE* If you are at your local fish market and smoked salmon is on sale then pick up a little extra then divide and freeze for later! I love surprising my husband with a smoked salmon and scrambled eggs breakfast after a long business trip!

Tuscan Seafood Salad

We love the markets in Tuscany. The fresh salads and meats are always available and you can order what you want and enjoy right there with a glass of wine. This is a similar recipe from what we had at the market. The freshness was amazing and the flavors of the seafood marinated together made this a perfect mid day salad
