"After hours" Steak, Peppers and Onions Frittata

This recipe goes back to the days when I would go dancing at The Black Brimmer in Manchester, NH and after we would go over to The Red Arrow and order a steak and cheese omelet!  It was so good!

I decided to create a Paleo version and call it "After hours" I added a full red pepper, yellow pepper and 2 thin slices of beef.  This was amazing!  I actually drizzles some sriracha over my piece...  YUMMY...

I just love a great one-pot dish that makes everyone go "WOW".  I prepare, cook and serve right out of my beautiful braising pan.  You can also use your paella pan which I have two but decided to use this one!

Note:  Using Cauliflower as your rice makes this dish a perfect Paleo side dish or main course!  This is also a stove to table dish without any mess in 30 minutes!

My husband loves short ribs and every time we go out to dinner and they are on the menu he wants to try them - just to check if they are better than mine!  I really wish he would stop doing that because he is always disappointed!  I try to tell him to order something else but he never listens...   

I have another great short rib recipe but made this one a little different and we really liked the balsamic glaze.

Tip: Buy a little extra as they are even better the next day!  Also, when at the butcher I like then a little smaller as they fit in the pan better.  If they only have the longer short ribs just ask them to cut in half and will gladly!

OK..  I need to admit something before I continue. I am addicted to Wild Friends Vanilla Espresso Almond Butter and can't stop consuming it!  It all started with my lava cakes and my daily smoothies.  

You can make this recipe as cupcakes, a loaf or what I did - use a cake pan and enjoy with your friends and a cup of tea.

My Chicken Scarpiello was a request from my husband.  He had it in the past with roasted potatoes but I wanted to make it Paleo.  I sauteéd up fresh baby spinach with garlic for our side.  This dish was very yummy and very hot!  I used hot Italian sausage but next time I will go with the sweet!  The flavors were amazing. Give this recipe a try!

Note:  I made it again and squeezed in fresh lemon into the pan before serving.  Delish....

My husband and I just love Naan bread and he was eating way to much of the packaged bread so I decided to make a healthier version.  I love to dip my sauce with this bread as well as making a soft taco, pizza or I add a poached egg on top with some leftover veggies for breakfast.  The possibilities are endless!  I hope you enjoy my Paleo Naan Bread Recipe!

Cindy's Tip! When I am making this bread for a specific meal I add spices to give extra flavor so it doesn't taste too much like coconut.

  • Italian dishes I add garlic powder, basil and thyme
  • Indian dishes I add a little garlic powder and coriander
  • Mexican dishes I add taco seasonings
  • Chicken dishes I add garlic powder and what other dried seasonings I am adding to my dish
  • When I want a little heat - sprinkle a little cayenne pepper!  Goes great with chili!

I had some left over grated zucchini from another recipe and there are always shallots and cubanelle peppers in my refrigerator.  I have fresh thyme in my garden and decided to make this side dish.  I then topped it with an over easy egg and slices of fresh tomato.  I did drizzle extra virgin olive oil over it all before my first bite!  Delicious...

Don't you love One-Pot Meals?  I do and this is a perfect Everyday to Gourmet recipe! This is really a combination of a meatloaf and a meatball.

Well my husband was traveling and I invited my girlfriend Lisa over for dinner and I made her a meatloaf.  Well not an ordinary meatloaf but a beautiful Italian Meatloaf and I topped it with smoky thick cut bacon and I made a beef gravy which was perfect.

I made this in my braising pan which looked absolutely beautiful.

Everything can be made in one pot!  Enjoy

I just love salmon and you can't get it any better than at City Fish!  I received my new bistro grill pan and I just LOVE it...   After grilling on my stove top I put under the broiler for just a few minutes and the maple syrup caramelized perfectly.

This dish was created to use up some seafood I had in the freezer.  Sometimes while at City Fish I get extra fish.  It's an Italian thing - Just in case!  We never know if last minute friends are coming over for dinner therefore I always have enough.....  You know just in case!  I freeze what we don't cook up and use.

I love (as you can imagine) tomato sauce and decided to make one but with all of the fish I had handy.  I defrosted the fish earlier in the day.  You can use any seafood you have handy or decide to pick up for this dish!  This goes great with your favorite pasta or spaghetti squash.

This recipe was inspired when my girlfriend Diana came to the lake for the day and we always have fun in the kitchen.  I was at our local butcher Stearns getting filet mignon for my son Steven.  (Yes I know he is still spoiled) I saw the pork on the counter and the butcher cut several pieces for me fresh.  Their meats are awesome and everyone is always helpful and happy!

Anyway Diana and I started mixing these spices together and realized we were making Mole!  The flavors made this amazing fresh pork another level of perfection that we all enjoyed.  

This paleo recipe is perfect for pork or even chicken!  Go ahead it is so easy and the cocoa really bring the flavors to an amazing level.

I have been on a muffin kick lately!  I do live my muffin pan and this recipe makes 12 perfect muffins. I use an ice cream scoop to keep them all the same size in shape.

I also used the enjoy life mega chunks. 

Our friend Joe came over for dinner and he and I were digging into them before we ate my Veal Parmesan which was also amazing.

I have to give this inspiration to my sister-in-law Patty.  She always bring a chocolate brownie pizza to our family events and I decided to create on Paleo and it is double chocolate well actually triple if we are counting the chocolate drizzle.  But there is plenty of fruit also on this yummy dessert.  

Did you know that Shop Rite has all of your Paleo ingredients and the exact products are much less then Whole Foods!  And you can find organic meats, vegetables and fruits. Almond meal which is something I use often is $2 cheaper at Shop Rite and it's the exact same product!  Go check them out!

I didn't add nuts but if you desire - go for it! Enjoy this Paleo Dessert!
