Green Vegetable Quiche with Emeril's Flaky Crust

I love our farmers market here in Palm Beach Gardens.  Every Sunday I take the 2 mile ride and pick up all of my fresh vegetables, fruits and a jug of Kombucha.

I normally make a crustless quiche but since we had company and my husband loves a flaky crust I found this one from Emeril and it was DELICIOUS!

Risotto Primavera

Primavera is normally a pasta dish with spring vegetables.  I was at the farmers market this morning and picked up red peppers and had frozen peas and porcini mushrooms at home.  

This side dish was perfect with my leg of lamb roast I made for our Sunday dinner!

Italians love lemon and capers.  Salmon goes great with these flavors and you can have this on the table in no time at all.  You can cook the salmon in the 1 pound piece of slice for individual servings and the cooking time will be about 5 minutes less.

Steak Tartare topped with Rocket

Every restaurant we have been to in Tuscany has their own version of a steak tartar topped with rocket salad. Rocket is known as arugula. A nutritious green leafy vegetable and very popular in the Mediterranean. I love using Rocket in salads or even cooking with them. I love when they are young and have just that slight peppery taste

*CHEFS NOTE* If you have difficult slicing the beef very thin, then place wrapped in the freezer for about 15 minutes then slice. If will be much easier to work with to create the perfect thin slices.
