Pork Cacciatore

Here is another amazing (if I may say so myself) one-pot Paleo Italian recipe!  OMG OMG OMG is all everyone was saying after each bite!  This is why I love to cook and entertain. We normally grill when we have company at the lake but I wanted to just relax in the sun with my girlfriend Pam and let the oven do the cooking.  What a big hit!  I served with sauteé spinach.

Cindy's Note: I used boneless pork shoulder and they came in 3 pound packages.   I picked up 2 because it really is better the next day!

To prepare on you BGE - Heat your grill to a medium temperature and set the covered pan in the center for 2 hours!

We are cooking this in the oven but you can use this same recipe in your slow cooker for 7-8 hours on medium.

In Tuscan and Spanish cooking you will see the word sofrito in many recipes. Sofrito is the combination of tomatoes, onions, peppers, carrots, garlic and fresh herbs to create a sauce. I use a sofrito in many of my recipes and is a perfect way to enjoy this dish.

You can use some of the sauce and use over zucchini noodles or spaghetti squash. I love to grill vegetables and top with this sofrito.

Garden Gazpacho

With all of the garden vegetables my husband requested a gazpacho and OMG it was great to use what I had just picked from my friends garden.  We just love living at the lake during the summer and our friends came over to enjoy this with us.

I do realize how lucky I am and try to show my gratitude every day!  We have a wonderful family and friends who truly love to be around us.

I did state it takes 25 minutes and that is the time to chop, put together and clean up.  The longer you let it sit in the refrigerator the better. Try to give it 2 hours to let the flavors combine.

All you need for this recipe are the ingredients (and add other fresh vegetables), a food processor and a bowl! Enjoy this Paleo Summer Soup!

Grilled Swordfish with Chimichurri and "Cauliflower" Rice with Vegetables

We have a local fish market near our lake house and he does keep a small selection of fresh fish he picks up each day.  Therefore I decided to go to the fish market first then plan out the rest of my meal.

Believe it or not I am not (well was not) a fan of swordfish but for some reason it looked really fresh and gave me this inspiration for the meal I made for my husband.

This dish was super easy to make and amazing beyond belief!  Every bite my husband was taking he kept saying; "this is delicious".  He grilled the fish so a team effort made this a special dinner for us.

Note:  You will notice in the ingredients I am not giving the amount because I used it through different parts of the recipe.  I did list the amount during the directions.  Paleo delicious!  OMG yes..........

Italian Frittata Club Sandwiches

I am known as the "frittata queen".  I love to use up leftover for frittata's or any fresh vegetables and/or meets I have handy.  This recipe was created after my family left from a 7 day visit and we only had eggs/bacon and a few ingredients in the house and I made this sandwich for lunch!  Perfect...

(be sure to check out my Paleo Italian Bread Recipe)

Use my Paleo Italian Rolls for this great sandwich!  I added my Paleo Mayonnaise on each slice as well.

Jícama chopped salad
  • Time: 10 minutes
  • Complexity: easy

Jícama chopped salad

While at the grocery store I decided that making beef and broccoli sounded really yummy for dinner.  Normally it's served with rice but I decided to prepare a jicama chopped salad.

While in Mexico last year we would get jicama sticks on the table and they are so refreshing and they really do take on flavors.

This is a nice and hearty salad that can be topped with your favorite protein but I do hope you try it with my beef and broccoli dish.  Super delicious...

Cindy's Tip:  Cut all of the vegetables the same size.  I like them in mini cubes!

Kale, Bacon, and Artichoke Dip

Kale, Bacon, and Artichoke Dip

Wow I was thrilled on how great this dip came out for us!  As many of you know we spend the summer at our lake house in Massachusetts and we often get pop-in company!  Luckily I never fret and always have basic ingredients (and a little extra) for these weekend.  As avid entertainers I can quickly come up with something to serve my guests and luckily I had a few pieces of bacon left from breakfast and this appetizer was a great hit!

We  had a little rain storm and enjoyed appetizers inside with our wine and when the weather cleared we grabbed our glasses and came outside.  Next thing we hear this noise and as we look over Jake is on the table eating the rest of the dip!  OMG he has never done that before and of course we all just laughed.  Oh Jake....   We love you...

Enjoy this paleo recipe and if you don't have kale use spinach or even arugula!  I have and it's great!

Oregano Roasted Split Chicken Dinner

My new Paleo recipe Oregano Roasted Split Chicken Dinner was inspired by the fresh Oregano my friend Kathy had in her front yard.  She has the best herbs in her yard and I love going over to her house and picking what I need during the summer while we are down the street at our lake house.  Thanks Kathy!  xo

I made this meal for our lake friends Bill and Lorraine and we all enjoyed every bite!  The spinach, olives and roasted sweet potatoes went great.

My butcher sliced the whole chickens in half to make this dinner super easy for me! Please enjoy this Paleo Chicken Dinner with your family or friends!
