I am known for opening the refrigerator and creating a quick and healthy dish.  I was looking at baby kale and 2 pieces of bone-in chicken breast along with zucchini, eggplant and red onions.  I decided to make a pesto!  Go ahead and give this one a try!

These pork chops were simply amazing.  Using my Cast Iron pan was perfect for our dinner.  Get it really hot to sear the chops then the oven will do the rest.  I did let the pork chops marinade for a few hours in the refrigerator seasoned with salt, pepper, fresh rosemary and thyme from my garden then olive oil.  

I made these for 3 of us!  I used the Center Cut Pork Chop Loin but you can use any cut for this recipe.

I am naming this recipe after my Nana. She loved peppers and onions and when making this dish I wished she was here to enjoy with us.

As my Nana’s granddaughter I also had a pot of sauce simmering on the stove and added a big ladle full in the middle of the pan before serving!

Cindy’s Tip! You can use 2-3 teaspoons of Italian seasonings.

Garlic Crusted Rack of Lamb with Shallot Sauce

OMG - That is the only work I can think of to start this recipe.  I love one pot recipes and this one was  a big hit for dinner.  We had another couple over for dinner and my husband kept asking me, "are you sure that pan is big enough"  Of course honey!  My lodge cast iron pan is Amazing and has not left my stove stop for the entire month of December!  The shallot sauce really made this dish pop with extra flavor.  All of those bits from the lamb along with the shallot, mustard and broth were the perfect combination!

Go ahead and make this! 

BTW! Mostly because it's just Glenn and I (and of course Jake) we don't need to do big shopping therefore I go almost everyday.  Almost everyone I know has told me the meats at Costco are great!  We really had a hard time believing that as we go to specialty meat markets for ours.  Well, I was at Costco with my sister-in-law and she grabbed 2 so I decided to get myself a few.  WOW the meat was amazing!  Very impressed by their meats.  Great for families or entertaining!

Every Italian serves an antipasti/antipasto when company arrives.  A traditional antipasto has meats, cheese, olives and anchovies but you can really create any antipasto to make it different or your own.

When I was at Shop Rite (E. Hartford, CT) these portobello mushrooms stood out and I decided to make a new version of an antipasto!  Everyone enjoyed it and so did I..

We are a very social couple and many times we have last minute dinner parties. Luckily I had all of the ingredients handy and created this delicious salad and again it looked gourmet but took me under 10 minutes to prepare!

*CHEFS NOTE* If you are at your local fish market and smoked salmon is on sale then pick up a little extra then divide and freeze for later! I love surprising my husband with a smoked salmon and scrambled eggs breakfast after a long business trip!

You may have noticed many of my new one pot recipes are using Lodge Cast Iron Pans!  I am just loving them including this recipe which we cooked on the Big Green Egg!  What a perfect combination.  

I love how the yogurt marinated the chicken.  This is a recipe you will want to try.  Now, you don't have to cook it in a pan on the grill - that was our choice.  You can cook it right on the grill or roast in the oven.

You really want to marinate the chicken for 2 hours!
