I am in the process of moving to our lake house for the summer and step one is cleaning out the refrigerator and using up what we have then bring up the rest. I have always hated to waste food and try to be creative in using it up! I love to create new recipes then share them with my lake neighbors over the summer. (they love it too)...

I had a bag of shredded carrots from another recipe for my segment on NBC CT  and am really not a huge fan. I like them in recipes but won't just cut them and eat them. Not sure why! Anyway - I decided to make cookies. I was actually pleased with them as I tested one and as I handed them out everyone love them! That made me happy!

If you don't have the already shredded carrots handy then use a hand grater or your food processor!

Glenn and I are on vacation!  Well kinda..  We just bought a house in Florida and are doing some work to our new house and staying at a friends enjoying the weather and each other.

I am not a big chocolate fan but for some reason baking these came to me and this is what we enjoyed while watching TV sitting outside enjoying the weather.

I hope you love this Paleo dessert or anytime snack!  They go great with an afternoon cup of tea or coffee.

I have to give this inspiration to my sister-in-law Patty.  She always bring a chocolate brownie pizza to our family events and I decided to create on Paleo and it is double chocolate well actually triple if we are counting the chocolate drizzle.  But there is plenty of fruit also on this yummy dessert.  

Did you know that Shop Rite has all of your Paleo ingredients and the exact products are much less then Whole Foods!  And you can find organic meats, vegetables and fruits. Almond meal which is something I use often is $2 cheaper at Shop Rite and it's the exact same product!  Go check them out!

I didn't add nuts but if you desire - go for it! Enjoy this Paleo Dessert!

I always make a full pot of coffee in the morning and save whatever is left for later during the day. Sometimes I add a little to my smoothie or other drinks or puddings. 

I decided to make a coffee frappe and it was so good!  This is certainly a treat but it was enjoyed.  I did add a scoop of vanilla protein.

Making ice cream is so easy!  If you have an ice cream machine just follow the manufactures instructions and if not, then just put in a glass dish and freeze!  

We love our hamilton beach ice cream maker!  So easy and So yummy...

This Paleo Creme Anglaise goes perfect with my Paleo Almond Angel Food Cake and Paleo Pumpkin Bread Pudding.

This will last for 2 days refrigerated in a sealed container!  If it lasts that long...

I knew when I received my new Emily Henry pie plate there had to be a new apple pie recipe.  I decided to make a crust for the bottom but top with a nut crumble.  Not sure why but it sounded good then topped with ice cream would make this Paleo pie the best one ever!
 
When you make the crust you do want to refrigerate it for at least 30 minutes to make it easier to work with .  The crust recipe will make 2 so you can either top the pie with it or save for another recipe.  Also, rolling out the dough with parchment paper does work really well.

This recipe was inspired by Giada's original recipe.   I received the email from the food network and without a second thought I was creating Paleo Frozen Brownie Sundaes in my kitchen!

If you know me or follow me....  Then you know my granddaughter Brooke.  We love our time together and she loves to bake!  I am a cook and she is the baker. When we are together it's mostly baking we do.  It's great that she can fly down to Florida in the winter during her school breaks as an unaccompanied minor. Then again she has been traveling with me since she was 2.

We were at our farmers market on Sunday and got our vegetables along with strawberries and blueberries. I already had bananas (which we are making our pudding with in this recipe) and the other ingredients for a fruit tart.  My tart pan is 11 inches so this recipe is measured to fit.  Adjust if you are using a 9 inch.

I love making waffles or pancakes on Sundays.  I have been enjoying my almond extract and decided to make these!
 
I preheated my oven to about 175 degrees F to keep each waffle warm until I was done making the entire batch and ready to serve.  
 
These are also great for freezing and enjoying during the week.  Go ahead and make a waffle BLT!

I just love my cast iron pan for many of my recipes and we were invited to our friends for dinner and since it was on my stove top I decided to make a dessert!  Plus it looks great to bring the pan with the dessert in it to a friends house!  

Mine is a 12 inch so I made a really big cookie!  We just warmed it while we were eating in the oven then topped with ice cream and melted chocolate.  YUM!

I am a pretty simple baker and really don't have a sweet tooth.  However my husband likes a little bit of chocolate at night.  I love baking with different nut butters and this blondie was a real hit and even I was picking at it...   

Have you tried the vanilla espresso almond butter from Wild Friends? If not, head over to shop rite and grab some now!  I have tried most of them and can just eat it out of the jar.

What i love most of this product is two college gals Kelley and Erika from the University of Oregon coming up and branding this nut butter.  I enjoy these stories of young entrepreneurs and the passion to be successful.  I wish them the best.

Tip: You can use any type of nut butter to make these yummy blondies!

This was actually the first time I made peanut brittle.  I thought these would go well in my cooking tins!  It's really easy to make just don't leave the stove.  This was my second batch as I went down stairs to move the clothes from the washer and dryer.  Not a great idea!!  (thank god for candles)

I was looking in my pantry and it's a l little chilly in Massachusetts so baking sounded good to me.  I don't do a lot of baking but I was looking at a can of pumpkin puree and grabbed it and these bars were made!

I brought 1/2 of the bars to my son's house and everyone loved them!

Jake's toy happened to be near me when I took this picture!  How cute...  Well I am getting ready for spring and we have been cleaning like crazy!  All of our cabinets (where does that stuff come from) and I was organizing our large pantry!  I made these cookies by finding the raisins and went from there.  

They were a hit!  Whew....    So yummy..  Go ahead and give them a try!

They actually remind me of oatmeal raisin cookies but better.
