Italians love lemon and capers.  Salmon goes great with these flavors and you can have this on the table in no time at all.  You can cook the salmon in the 1 pound piece of slice for individual servings and the cooking time will be about 5 minutes less.

Sauté White Fish and Greens

Meal preparation is easy if you are organized.  I love to make a few meals for the week and have them ready to pull out of the freezer in the morning and just warm to enjoy for dinner.

This recipe is perfect.  I just lightly brown both sides of the fish and slightly cook my greens.  I store in the refrigerator to enjoy within a day or 2 them just warm up in the pan for an easy dinner.  

It's really fun to be healthy!

Shrimp is great because you can get it fresh or frozen (keep handy frozen) and it cooks up super fast. I love enjoying with orzo and vegetables for a quick family dinner.

At the lake during the summer we love grilling.  Using our Cast Iron pan makes it easy to grill anything.  One large sweet potato was perfect for my husband and I as it made 6 cakes.  Just double or triple to make more.

My Nana and I would stuff Manicotti's for Sunday dinner.  She would love to get them ready in the morning then we would bake them for dinner.  Her and I would mostly eat the inside stuffing. I decided to make the filling as meatballs and they were amazing.  I served over a vegetable primavera pasta.  Super yummy!  Go ahead and enjoy this Italian classic.

I have been buying so many local zucchini's lately and enjoying all of them.  I didn't realize there were 3 good size ones in my refrigerator along with a bag of carrots so I made muffins.  All of the other ingredients were handy in my pantry!  These paleo zucchini and carrot muffins are great.
