I just love using my pressure cooker! I make french onion soup often because it's so good...   I never made it in the pressure cooker and it was really easy and perfect.  

Go ahead and try it.  Now I used the smaller pan because I was just making enough for 4 as an appetizer serving but feel free to use the larger pot.

Also, I like the combination of chicken or vegetable and beef broth because it's a lighter broth but feel free to use all beef.

Sauté White Fish and Greens

Meal preparation is easy if you are organized.  I love to make a few meals for the week and have them ready to pull out of the freezer in the morning and just warm to enjoy for dinner.

This recipe is perfect.  I just lightly brown both sides of the fish and slightly cook my greens.  I store in the refrigerator to enjoy within a day or 2 them just warm up in the pan for an easy dinner.  

It's really fun to be healthy!

Spicy "Riced" Sweetheart Egg Bites

I have been over indulging in vegetables and just love it.  I had 1 head of both cauliflower and broccoli and wanted to use them up.  I decided to rice both of them in my food processor and create 2 recipes.  One is for these little spicy sweetheart bites for Valentine's Day and the other I am going to use in my stuffed cabbage. The recipe will be similar to this recipe except I am using ground ground turkey and the riced cauliflower/broccoli and not the zucchini.

I made these in mini-muffin tins.  I sprayed with coconut oil spray I found at Trader Joes

I have so many delicious recipes using sweet potatoes and my granddaughter loves chocolate and we made these together after our vacation to Florida.  Brooke wasn't sure at first about the sweet potato but we gave it a try and really liked it and hope you do too!

Tip: If you don't have a sweet potato handy then use sweet potato puree (keep it in your pantry!) or you can use canned pumpkin puree.
