I love cannoli's!  Let's just start there.  I remember when I was little my Nana and I would spoon out all of the ricotta filling from the shell of the cannoli and would laugh like little kids.  I really miss her especially around the holidays.  I just hope I am as good as a grandmother as she was to me!  

I came up with these cookies as it has the ingredients as a cannoli but in the form of a cookie.

I am in the process of moving to our lake house for the summer and step one is cleaning out the refrigerator and using up what we have then bring up the rest. I have always hated to waste food and try to be creative in using it up! I love to create new recipes then share them with my lake neighbors over the summer. (they love it too)...

I had a bag of shredded carrots from another recipe for my segment on NBC CT  and am really not a huge fan. I like them in recipes but won't just cut them and eat them. Not sure why! Anyway - I decided to make cookies. I was actually pleased with them as I tested one and as I handed them out everyone love them! That made me happy!

If you don't have the already shredded carrots handy then use a hand grater or your food processor!

You can make these a lot neater then I did.  I actually ran out of flour so I was struggling a little but the clear wrap helped a lot.  Go to youtube and search for fig newtons and they will show you how to roll the dough.  I used a clear wrap on the bottom and the top of my dough.  It made it a lot easier to roll.  I can't wait to make these again!

Jake's toy happened to be near me when I took this picture!  How cute...  Well I am getting ready for spring and we have been cleaning like crazy!  All of our cabinets (where does that stuff come from) and I was organizing our large pantry!  I made these cookies by finding the raisins and went from there.  

They were a hit!  Whew....    So yummy..  Go ahead and give them a try!

They actually remind me of oatmeal raisin cookies but better.
