Here is another great one-pot meal that is also ready in 30 minutes!  We just love our Paleo Recipes and especially one-pot that are great for entertaining.  I made this for friends and brought the pan to the table!  Perfect....

If you don't have Cindy's Tuscan Blend then use the following (this is not my blend but a good substitute for this recipe) 

  1. 1 teaspoon dried rosemary
  2. 1 teaspoon dried basil
  3. 1/2 teaspoon dried thyme

This Portobello ragu is hearty and flavorful. I love to serve over zucchini noodles or with sautéed chicken. You can use fresh or dried herbs for this ragu. My recommendation would be to add the fresh herbs in towards the end of the cooking process but the dried herbs can go in right away!

This is the perfect paleo breakfast for 2!  I cut up my onions, peppers and other vegetables in the beginning of the week so I have them handy.  On the weekends I love to create a new recipe using my left overs!  This one was a perfect Sunday breakfast for my hubby and I.

How to clean a portobello mushroom

Holding the mushroom in the palm of your hand and using a small spoon gently go under the stem of the mushroom and lift it out.  Use the spoon and carefully rub the spoon around to remove the gills then discard.  Use a paper towel or clean kitchen towel and wipe around the mushroom.

I love quinoa and I know many Paleo followers will say that it's not allowed but I love it!  We don't have it often but I think it's really good for us to eat.  I served these over a quinoa salad full of vegetables then drizzled with EVOO and Balsamic.  Perfect to bring to a summer outing.  That is what I did and everyone loved it.  It went great with my friends Lisa's ribs!

Jake's toy happened to be near me when I took this picture!  How cute...  Well I am getting ready for spring and we have been cleaning like crazy!  All of our cabinets (where does that stuff come from) and I was organizing our large pantry!  I made these cookies by finding the raisins and went from there.  

They were a hit!  Whew....    So yummy..  Go ahead and give them a try!

They actually remind me of oatmeal raisin cookies but better.

I love the combination of raspberries and pistachios, but you can be creative on your choices!

My disclaimer for this recipe! I am Italian and during the holidays especially I make everything BIG!  What if unexpected guests stop by!  What if family brings a friend!  What if I ran into someone at the grocery store and they are home alone for a holiday (that has really happened).  

These are some of the reasons there is always an extra dish waiting in the refrigerator on stand-by or when I make a dish - It's really BIG and LOADED with lots of good stuff.

Note!

  • You can make this really big lasagna and left overs are amazing!
  • You can cut ingredients in half to make an 8x10 size pan.
  • You can omit the ricotta, mozzarella, parmesan to make it dairy free
  • You can make the meat sauce, cut the recipe in half and freeze the remaining sauce for another time.
