I am not sure if Artichoke Francaise is an appetizer or main course! I just ate 2 of them as an appetizer while making dinner.. Give this recipe a try and you can substitute flours to make this a paleo recipe or gluten free.

Artichokes in a lemon and herb sauce

I grew up with my Nana steaming the large pot of artichokes on Sunday's and we would sit around the table before dinner with our bowl and just eat them with lots of laughter and smiles.  My Nana was very smart and she knew if she was making artichokes we would all sit around the table with her and that is all she wanted.  I came up with this recipe to add a different twist to artichokes but I still enjoy them steamed with olive oil and tons of chunky pieces of garlic!

**Cindy's Tip!  We all want to get to the heart of the artichoke.  Enjoy each leaf peddle by putting in your mouth then using your teeth to get the delicious flesh in your mouth.  Enjoy each leaf and don't hurry for the heart!  When you arrive to the bottom of your artichoke, there is a little "fuzzy hair"--just remove them and cut around the heart.  Put on your plate, cut it into pieces and just lightly dip and take a bite and enjoy that flavor in your mouth.  Enjoy with your family and friends! **

This is an amazing one-pot recipe.  I served over riced cauliflower but jasmine rice or roasted vegetables would be great too!

Note:  I love green onions and hate when they wilt in the refrigerator so I used the entire bunch.

Tonight for dinner I am making my Asian salmon with bok choy! Last night I made a roasted chicken so I thought I would also prepare a chicken soup using an Asian twist! I made my own stock and it was super easy using my pressure cooker but you can also use 8 cups of chicken broth!

My family loves popovers and I enjoy making them for them.  We all so the popover dance together.  I had some fresh asparagus and my Lodge Cast Iron pan was on the stove already to sauté them.  Last minute I decided to create a large popover and I was so happy that everyone just loved it.

I know - I know - I am Italian.  However, we have Labanese friends and they would bring over pita bread, grape leaves and kibbeh.  So good!  I remember how my Nana's friend could take a large pieces of pita and rip it in 1/2 the long way so each person got one half of a large pita and made us an amazing sandwich.  Sometimes I wish i was that little girl in at my Nana's house!

I love lamb and that is the traditional way to make kibbeh but not everyone enjoys it so I decided to make it with beef and will put out a large platter to serve the kibbeh by adding grape leaves, hummus, tabouleh,  lettuce, cucumbers, feta cheese, olives and extra-virgin olive oil.

If you asked me what is  my favorite Italian dish - My answer is always the same.  Chicken Cutlets.  There are so many way to enjoy "Cutlets"  Check out my blog post on some of my tips and other recipes.  

Many recipes include frying your cutlets but I don't always want the mess of splatter to clean up so I love to bake them.  So easy and less mess!

Cindy's Tip:  You can make many of these and separate in containers or sealable freezer bags then freeze to enjoy another time.

I wasn’t sure what to prepare for dinner and saw Cod at my local fish market and quickly thought about fennel and created this amazing meal. It was so easy to prepare this Baked Cod and Fennel in a Package and it is a great Paleo Recipe for a quick weeknight meal or any night.

Actually how cute are these packages to serve your guests. Everyone can open their own package and squeeze their lemon wedge to enjoy this delicious meal!
