I made this meal for our lake friends Bill and Lorraine and we all enjoyed every bite!  The spinach, olives and roasted sweet potatoes went great.

I was laughing to myself while making these because there is really no such thing as a boneless chicken wing.  But we are using the same method and using boneless chicken.

I love chicken wings and so do millions of others but when entertaining at home I don't like to make them because of the mess.  The bones that we need to discard, the big pan to fry the wings in and of course all of the sticky fingers!  

My Paleo boneless chicken recipe are not only healthy and easy to make but just pop in toothpicks and there won't be any sticky marks in your house!

Paleo Chicken Pot Pie

Paleo Chicken Pot Pie

This is my leftover Paleo chicken pot pie!

I made my Deep dish apple pie with a nut crumble topping.  When I made the Paleo crust there was enough for 2 so I decided to make a chicken pot pie with just a cover.

I am using left over chicken from my roasted chicken dinner most of my vegetables are frozen! I added in extra peas because I just love them but add in what you like and if you have leftover roasted butternut squash or sweet potatoes; add them too!  I meant to but forgot as we had roasted butternut squash for dinner the night before.

You can prepare your chicken and chop vegetables but I made this meal super easy.

My Le Creuset Pan was perfect for this recipe for the two of us!

If you keep your freezer stocked with your favorite vegetables it makes it easy for a comfort meal and ready in no time at all.

To make the crust!

 

Ingredients for the crust

  • 1 cup almond flour
  • 1 cup coconut flour
  • 1/2 cup tapioca flour
  • 1 teaspoon sea salt
  • 1 cup palm shortening, room temperature
  • 1 large egg
  • 1 teaspoon white vinegar
  • 1/4 cup cold water, icy cold

 

Directions

  1. In a large mixing bowl sift the almond flour, coconut flour and tapioca flour.  Add in salt then stir well.  
  2. Take the palm shortening and break apart with your hands then work into the flour mixture until you have a crumble mixture.
  3. In a small bowl whisk egg then add in vinegar and cold water to combine well.  
  4. Add wet mixture slowly into the dry mixture and work into a ball by using your hands.
  5. Cut in two pieces and form into a disk shape. Wrap with plastic and refrigerate for at least 30 minutes.
  6. On a work board add a little almond flour down and lay one disk.  top with a little almond flour and top with a piece of parchment paper and roll out until you have the size you need for your pie plate.

I just love this season with all of the fresh vegetables. I love going to the various farmers markets and creating great meals as we sit on our deck at the lake to enjoy with a nice glass of wine. I feel that this Italian dish will make you and your family happy. Give this Paleo Creamy Chicken Primavera recipe a try!

You can make this entire meal on a grill by grilling your veggies then set a pan on either your grill or side burner and make the cream sauce, slice up veggies and chicken then add to pan! Dinner is ready.. How easy was that.. I am going to share my recipe the way I prepared by grilling the chicken, zucchini and red pepper then did the rest in a pan. You can make this entire dish in one big pan by slicing the chicken and sautéing first then remove from pan (set aside on a plate) add in vegetables by the order below and cook until tender. Remove from pan! Add in butter, cream and cheese and simmer over a low heat then add in chicken, vegetables, seasonings and simmer for a few minutes until warm! Enjoy

If you want to make this a true paleo dish - Substitute cream and use coconut milk and omit the parmesan cheese. It is a little "cheat" paleo but totally gluten free!

Below I am including my tips on cutting a bell pepper.

I love quinoa and I know many Paleo followers will say that it's not allowed but I love it!  We don't have it often but I think it's really good for us to eat.  I served these over a quinoa salad full of vegetables then drizzled with EVOO and Balsamic.  Perfect to bring to a summer outing.  That is what I did and everyone loved it.  It went great with my friends Lisa's ribs!

A Ragu is a thicker sauce mostly made with meat but you can use chicken or mushrooms. The longer you cook the more flavors will increase. You can serve over your favorite roasted vegetables or even over a breakfast frittata.

I love left overs and especially during our Hewfit challenge I am hungry more often.

Last night I made Chicken Scarpiello and packed up the extra chicken and chicken sausage and made this dish.  I will share a recipe for you to cook up chicken if you don't have left overs handy.  Actually, go and pick up a rotisserie chicken. That would be super easy!
