Chicken, Sausage, Spinach, Artichoke over Pasta

I was about to go grocery shopping and knew that I should have lunch first! Rule #1 eat before you go food shopping… I had all of these ingredients handy and it is cold outside so this was a perfect lunch for me!

I make this type of dish often to use up left over chicken and sausage or you can purchase fresh and sauté for this delicious Paleo recipe. You can also use zucchini if you have some handy!

The combination of chicken sausage, spinach, artichokes with herbs and garlic make this an amazing pasta dish for lunch or dinner.

I sometimes use spaghetti squash, our favorite pasta! There are also some great gluten free pastas available now!

Fresh Herb Chimichurri Chicken Kabobs

Don't you just love fresh herbs in the summer.  We have pots of herbs along our walk way and it smells amazing.  At the lake we do a lot of entertaining and making my Fresh Herb Chimichurri Chicken Kabobs are always a hit!

I like to marinade the prepared kabobs in the refrigerator for several hours.  Then save some of the pesto to serve along side the kabobs.  Delicious!

Cindy's Tip!  If using wooden sticks be sure to soak in water for at least 30 minutes before preparing the kabobs. That will prevent the sticks from burning while grilling!

Garlic Devil Chicken

Garlic Devil Chicken

The name devil chicken came from the amount of red chili pepper flakes you add to the dish.  I happened a lot of garlic and roasted it then didn't know what to do with it so I added to the sauce of this dish.  OMG delicious!

You can ask your butcher to cut up a whole chicken to feed a family.  I love left overs so picked up 2 bone-in breast and 2 thighs for my husband and I.

I also used the  garlic in my sauté garlic and roasted up butternut squash to complete this dish.

Enjoy!

Herb Grilled Chicken

I have to start off this recipe by saying OMG.  I had a sisters weekend to celebrate Michelle's 50th and our friends Dennis and Lisa offered to take us out on their boat for the day.  I made some amazing Herb Marinade from my garden and let the chicken sit for about 5 hours in the refrigerator.

Glenn grilled them then I thinly sliced and made a large sandwich.  I cut them up into individual portions and everyone just loved them!  Hubby even ate the remaining sandwiches for lunch the next day!

Now to keep the chicken paleo you can enjoy grilled or over a salad or grill up vegetables (zucchini, eggplant and red onion).  That is what my sisters and I did with the left over chicken then I drizzled EVOO and balsamic.  Super delicious.

Go ahead and grill this today!

Here is the recipe to my Herbs and Garlic Marinade!

Enjoy xo

Italian Chicken Pot Pie

Italian Chicken Pot Pie

I hear from a lot of my friends that when they make an entire pot pie (in a pie pan), a lot of it goes to waste. Let’s make individual chicken pot pies. It is so easy!
Prepare these the night before, then when you get home from work, just preheat the oven while you’re getting settled in. Put them in the oven, and in 30 minutes you have a great dinner!
This is also a great recipe if you made a whole chicken the night before and want to use the leftovers.

This is such a great dish.  I made this for one of my cooking classes and we used myLe Creuset Braising Pan and this dish came out just amazing! Due to the time and large class we did not remove the chicken but added tomatoes, lemon juice, green onions and tampanade into the pan and covered for 10 minutes (after we cooked the chicken) and this was truly a mouth watering dish!

Jake's Dehydrated Chicken

Jake's Dehydrated Chicken

Jake loves chicken jerky but it gets expensive. I bought 5 pounds of chicken breast for 1.99 per pound and used about 2 pounds for Jake and the rest for us. I put them in individual freezer bags. Left some in the refrigerator - it is good for a couple of weeks then the rest in the freezer to take out as needed. Jake really loves this dehydrated chicken. I do not have a dehydrator but the oven worked fine. This is what I did to make these yummy homemade treats for my wonderful dog - Jake!!

Mediterranean Chicken

As our summer is starting to wind down it is time to start using up what we have in the refrigerator at the lake. All of my cherry tomatoes are coming at once and my basil is taking over the garden. I had a package of thin sliced chicken breast and decided to make this dinner.

If you know me then you will love another one of my one pot meals!

This was a dinner for two but there was enough left over for lunch!

NOTE: You can use chicken breast, cut in half then cover with plastic and thin using a mandolin.
