"After hours" Steak, Peppers and Onions Frittata

This recipe goes back to the days when I would go dancing at The Black Brimmer in Manchester, NH and after we would go over to The Red Arrow and order a steak and cheese omelet!  It was so good!

I decided to create a Paleo version and call it "After hours" I added a full red pepper, yellow pepper and 2 thin slices of beef.  This was amazing!  I actually drizzles some sriracha over my piece...  YUMMY...

Note:  Using Cauliflower as your rice makes this dish a perfect Paleo side dish or main course!  This is also a stove to table dish without any mess in 30 minutes!

If you asked me what is  my favorite Italian dish - My answer is always the same.  Chicken Cutlets.  There are so many way to enjoy "Cutlets"  Check out my blog post on some of my tips and other recipes.  

Many recipes include frying your cutlets but I don't always want the mess of splatter to clean up so I love to bake them.  So easy and less mess!

I was at our local Whole Foods staring at the meat case poultry.  I decided to get 2 bone-in chicken breast, 2 bone-in chicken thighs and 2 hot chicken sausage (for some heat).  I grabbed a bunch of vegetables and got home and started to cook.  I really didn't  have a plan and this recipe was created.

Feel free to add more ingredients to feed a family. This is a perfect recipe for 2. 

I roasted some chopped red potatoes and added them into the pot before serving.  I knew my husband would wants some carbs in the dish.  Totally optional.

I love my one-pot Paleo comfort meals!  To make the spaghettis squash is so easy.  Just poke about 10-15 holes by using a metal skewer then roast.  I also use my Le Creuset Braising pan for so many great meals and it goes from the stove to the table!  How amazing is that??
