This was actually the first time I made peanut brittle.  I thought these would go well in my cooking tins!  It's really easy to make just don't leave the stove.  This was my second batch as I went down stairs to move the clothes from the washer and dryer.  Not a great idea!!  (thank god for candles)

Ribollita is a Tuscan stew that is thick and filled with dark green beans and vegetables cooked down, then boiled again. This is my paleo version of this traditional stew. I love using the combination of cabbage, kale and swiss chard but you can also use any other savory greens such as chicory.

Spicy "Riced" Sweetheart Egg Bites

I have been over indulging in vegetables and just love it.  I had 1 head of both cauliflower and broccoli and wanted to use them up.  I decided to rice both of them in my food processor and create 2 recipes.  One is for these little spicy sweetheart bites for Valentine's Day and the other I am going to use in my stuffed cabbage. The recipe will be similar to this recipe except I am using ground ground turkey and the riced cauliflower/broccoli and not the zucchini.

I made these in mini-muffin tins.  I sprayed with coconut oil spray I found at Trader Joes

At the lake during the summer we love grilling.  Using our Cast Iron pan makes it easy to grill anything.  One large sweet potato was perfect for my husband and I as it made 6 cakes.  Just double or triple to make more.

Braciole is a popular Italian recipe. This meat is cooked all day in a sauce until tender. What a great way to use flank steak to make an amazing paleo recipe for your family or guests! I love to stuff with spinach and roasted red peppers but you can also add fontina cheese to this dish!

My Nana and I would stuff Manicotti's for Sunday dinner.  She would love to get them ready in the morning then we would bake them for dinner.  Her and I would mostly eat the inside stuffing. I decided to make the filling as meatballs and they were amazing.  I served over a vegetable primavera pasta.  Super yummy!  Go ahead and enjoy this Italian classic.

I make some sort of "cutlets" a few times a week.  Sometimes I call it "Milanese" because it sounds sexy! Tonight I wanted to make something with sweet potatoes on the side and came up with this recipe.  The apple really adds an extra layer of flavor.

I have so many delicious recipes using sweet potatoes and my granddaughter loves chocolate and we made these together after our vacation to Florida.  Brooke wasn't sure at first about the sweet potato but we gave it a try and really liked it and hope you do too!

Tip: If you don't have a sweet potato handy then use sweet potato puree (keep it in your pantry!) or you can use canned pumpkin puree.

We love our Big Green Egg.  As we are testing new recipes for my new show coming this fall I wanted to make a pasta dish on the Big Green Egg.  I used my 12 inch Lodge cast iron pan.  This was a big hit and this recipe fed 4 adults and 4 kids!
