Broccoli and Cauliflower Casserole

There is a story to the creation of this recipe.  I always have a head of cauliflower in my refrigerator (I just love it) and on Thanksgiving my friend Donna brought broccoli for her niece and we forgot to steam it up for her!  

During my normal weekly clean up the refrigerator to see what I have left from the week I took the two  out along with a few scallions I had left over and created this dish.  Of course I added all of my favorite Italian herbs and was really happy with this dish!  

I did sprinkle some freshly grated parmesan cheese on top before serving but that's the Italian in me.  You can also add in some melting cheese in the mixture if you desire.  Maybe about 3/4 cup!

This is my favorite side for rack of lamb or a roasted chicken dinner! Broccoli and cauliflower Gratin just go so well together and this side dish is always a big hit. You can make in advance for company and just warm before serving!

Cauliflower "Risotto" with Porcini Mushrooms & Peas

Risotto is a Northern Italian rice dish that is cooked for a long time stirring often.  A traditional risotto is cooked with a warm broth added slowly to create a creamy consistency.  As a paleo dish, it takes less time to prepare and the cauliflower gives it a perfect risotto feel.

I remember my Nana would make a cup of coffee and grab her stool and sit at a stove for an hour while preparing risotto!

 **Cindy's Tip!--Take the liquid from the porcini mushrooms and strain to use in soups.  You can also add a little to your risotto to gain a richer flavor!**

OK big news today!  When I was visiting my friend Teal at Sons and Daughter farm and winery I learned a few things.  First I had an amazing wine sampling then of course I went for my 2 jugs of kombucha.  While I was there her and David took me on a little tour and my takeaway was Yucca Root.  OMG...

Teal brought my a tasting of tapioca pudding their chef made from yucca root and it was the best I ever had.  I just love the texture of tapioca pudding and it was to die for!  Really.....

She also told me that the yucca root made a great thickening agent and also how you make cassava flour.

While I am doing our HewFit Challenge at our gym and the "game" excludes any flours even (almond, coconut, tapioca, etc) so I grabbed a yucca root to make Cauliflower cakes.

Enjoy a Paleo Pizza for dinner with a cauliflower crust. You can add any of your favorite toppings! Don't you just love paleo recipes. I love to top my pizza with fresh herbs.

Cindy's Tip! In a hurry just cut the head of cauliflower into florets and place in a microwave bowl then add water to cover half.  Set the timer for 7 minutes, drain then process!  

Disclaimer! I like a little cheese on my pizza but feel free to omit. Sauté up some greens or top with left over chicken or meatballs.  Go ahead make a pizza perfect for you!

I love using my 12inch Lodge cast iron pans!  You can prepare, bake and serve out of these pan.  I love one-pot recipes.

Coconut Roasted Cauliflower with Parsley Pesto

This recipe was inspired by Alex Guarnaschelli while i was watching the food network during the Thanksgiving weekend.  I just love cauliflower and have an herb garden which includes parsley therefore this recipe was created!  I also always have canned coconut milk on hand for my smoothies.  

During her segment she suggested the cauliflower be marinated for at least 2 hours.  I marinated for exactly 2 hours.  She said it could be marinated overnight and I don't think that's a great idea because I marinated one overnight at first and the coconut over powered the other favors so this recipe is my #2 cauliflower.

I was home alone for a few days after Thanksgiving and made this for me.  It lasted me several meals and I enjoyed every bite.  My parsley pesto is more like a dressing then a pesto.

I made this soup using leftover broccoli and cauliflower in the refrigerator.  I actually made the soup and refrigerated for 2 days then added to the pot and once I brought to a almost boil I added in the cream.  It was a little thick so I added about 1/2 cup more of vegetable broth.  This soup was really good.  I may add a little red pepper flakes in next time!

We grew up enjoying warm rice pudding for dessert.  My Nana loved keeping it warm on the stove for us and for he too!  It was one of her favorites and my our family still gets excited over warm rice pudding.

I decided to try a Paleo version and was very surprised by the similar texture and flavor.  I use cauliflower in many of my recipes such as risotto, paella, arancini and even pizza crust.

Italian Pickled Vegetables

My grandfather had a very large garden and my Nana would wait for him to bring in the fresh vegetables. My Nana and I would take the fresh vegetables and make a bunch of jars and we would serve them on our Sunday dinners along with her antipasti. You can really cut the vegetables anyway you want. I like some slices and others in a stick form (sliced).

My Nana insisted that all of the vegetables except for the cauliflower and artichokes to be the same shape.

You have heard about the cottage pie and shepherds pie and these two recipes I prepared with sweet potatoes.

It has been really cold here in Connecticut and I have been cleaning out my freezer and creating new recipes. Using 2 heads of cauliflower to create this yummy crust to surround ground turkey and vegetables in a thick chicken stock made this a great dinner.  I also love that using my beautiful braising pan it was perfect from the stove to the table!  Also, I am going to show you how to make this in 1 pot!  Enjoy

Hubby and I were at the Farmers Market and picked up tons of fresh vegetables, fish dip and a leg of lamb for Easter and a few tenderloins.  Last night I really wanted salmon and I created this amazing side dish and it's Paleo for you to enjoy!

I used only 3 tablespoons of organic cheddar for the au gratin and wow was this a perfect side.  I hope we have left overs as it will be all stored together and enjoyed for lunch today!
