The banana cream does taste like the batter for your bread!  So yummy...

OK..  I need to admit something before I continue. I am addicted to Wild Friends Vanilla Espresso Almond Butter and can't stop consuming it!  It all started with my lava cakes and my daily smoothies.  

You can make this recipe as cupcakes, a loaf or what I did - use a cake pan and enjoy with your friends and a cup of tea.

I love summer time at the lake because I get to spend it with my grandchildren.  I have Ty (4) all week and this morning he wanted waffles.  He love to cook with me so of course we made them homemade.  The best part for him are the eggs!  I decided to whisk the egg whites to make these waffles even more amazing.  

This batter made 4 perfect waffles in my waffle iron for my 2 sweeties!

I am the queen of frittata's! While at Shop Rite, E. Hartford I picked up an acorn squash not know what the plan was but it felt right to grab one!

My husband is traveling this week in Germany and I was cleaning out the refrigerator and decided to make breakfast with the acorn squash.  

This was so yummy.  

I used 1 egg and 2 egg whites as my choice but I will list 2 eggs in the recipe. You decided!

We just love having friends and family over while we are at the lake.  My long time friend Pam and her husband Tom visited for the weekend and I want to spend time with them and not slaving over the stove but serving them amazing food.  I have known Pam since 1993 and I just adore her!  We did enjoy the weekend and the weather was just perfect.

This quiche was a big hit!

My nana and I loved making Italian baked eggs on the weekends. We loved making everyone their own special serving to enjoy. My grandfather always had a very large garden and we would send him to pick fresh tomatoes for us! There is nothing better than a fresh fresh picked tomato! We would use whatever herbs we had handy.

 Nana and I would add green scallions to ours and diced onions to my grandfathers. Everyone had his or her special request.

I love pancakes and can eat them every day!  I woke up and wanted blueberry pancakes and these were created!  If you love paleo pancakes then give these yummy ones a try!  I have a griddle pan included with my wolf stove and use it every day and it makes the best pancakes!

I got mine really hot to about 400 degrees to make these!

Some mornings we just want muffins and a cup of coffee. I am Italian and there is always pancetta in my refrigerator. Using fresh herbs in these muffins makes them extra special but if you don't have them handy go ahead and use dried.

*CHEFS NOTE* A little tip on finely chopping pancetta: place in the freezer for 15 minutes to firm then you will find it easier to chop with a sharp chefs knife.

It's almost the end of the season for us at the lake and with us moving to Florida I really want to clean out the refrigerator.  I will be using up what I have over the next few weeks and this morning I found 2 bags of frozen blueberries.  I normally use them for my smoothies and this morning I wanted pancakes.  I love pancakes but don't always want to stand over the stove flipping them. 

This morning I decided to make one in my cast iron skillet and OMG I was in Paleo heaven!  I did drizzle local maple syrup and now I am a happy person ready to start my day.

Another one-pot recipe perfect for your family!  Just carefully bring the skillet to the table and slice to enjoy together.

I love making waffles or pancakes on Sundays.  I have been enjoying my almond extract and decided to make these!
 
I preheated my oven to about 175 degrees F to keep each waffle warm until I was done making the entire batch and ready to serve.  
 
These are also great for freezing and enjoying during the week.  Go ahead and make a waffle BLT!

What do you do with 1 carrot, 1 apple and some nuts leftover from Thanksgiving!  You make Paleo Morning Glory Muffins! This recipe makes 12 muffins in my Bialetti Aeternum Muffin Pan!  I used an ice cream scoop to make them all the same size.

Truth:  I ate my first one warm with sunbutter spread over both halves (I cut in half to enjoy more sunbutter).  The perfect snack with my cup of green tea this afternoon.  

I used sunbutter (sunflower spread) but feel free to use your favorite nutbutter!

This is the perfect paleo breakfast for 2!  I cut up my onions, peppers and other vegetables in the beginning of the week so I have them handy.  On the weekends I love to create a new recipe using my left overs!  This one was a perfect Sunday breakfast for my hubby and I.

How to clean a portobello mushroom

Holding the mushroom in the palm of your hand and using a small spoon gently go under the stem of the mushroom and lift it out.  Use the spoon and carefully rub the spoon around to remove the gills then discard.  Use a paper towel or clean kitchen towel and wipe around the mushroom.
