"After hours" Steak, Peppers and Onions Frittata

This recipe goes back to the days when I would go dancing at The Black Brimmer in Manchester, NH and after we would go over to The Red Arrow and order a steak and cheese omelet!  It was so good!

I decided to create a Paleo version and call it "After hours" I added a full red pepper, yellow pepper and 2 thin slices of beef.  This was amazing!  I actually drizzles some sriracha over my piece...  YUMMY...

My husband loves short ribs and every time we go out to dinner and they are on the menu he wants to try them - just to check if they are better than mine!  I really wish he would stop doing that because he is always disappointed!  I try to tell him to order something else but he never listens...   

I have another great short rib recipe but made this one a little different and we really liked the balsamic glaze.

Tip: Buy a little extra as they are even better the next day!  Also, when at the butcher I like then a little smaller as they fit in the pan better.  If they only have the longer short ribs just ask them to cut in half and will gladly!

This is what I did to prepare the corn beef

  • First you have to precook the corned beef. I bought about a 3 pound piece.
  • I placed it in a large cast iron pan and covered with water. Then added about 3 tablespoons of whole peppercorns, 1 tablespoon of coriander seeds and 2 bay leaves.
  • Next with the cover off I brought to a boil then covered and lowered to simmer for about 3 hours.
  • When I took it out it was fork tender and delicious.
  • Put into a glass bowl, cover and refrigerate until the morning.

Don't you love One-Pot Meals?  I do and this is a perfect Everyday to Gourmet recipe! This is really a combination of a meatloaf and a meatball.

Well my husband was traveling and I invited my girlfriend Lisa over for dinner and I made her a meatloaf.  Well not an ordinary meatloaf but a beautiful Italian Meatloaf and I topped it with smoky thick cut bacon and I made a beef gravy which was perfect.

I made this in my braising pan which looked absolutely beautiful.

Everything can be made in one pot!  Enjoy

I am a seafood and chicken kind of gal but my family loves beef!  When we have all of the kids it's easy for us to make a beef tenderloin.  

I always start by olive oil and a little salt and pepper!

My husband went up in my office and found some Black Dog Belly Rub from Mom's Gourmet and seasoned away.  We roasted and took it out medium rare in the middle and everyone had a piece they enjoyed. 

(I even made popovers which was enjoyed my me - and everyone else)

When entertaining I love Roasting a Beef Tenderloin. This is great for holidays but we love to enjoy for summer entertaining. We start by searing on the grill then roasting in the oven. There is something about a Beef Tenderloin that bring many smiles. This is also a great Paleo Recipe and Gluten Free! Or just a Amazing recipe to share with your family and friends.

You can serve this delicate cut of beef so many ways. You can serve with my Mushroom Ragout which is always great. If you want to serve on a buffet then thinly slice and make a little balsamic reduction sauce. You can enjoy warm or cold. I normally take the leftover tenderloin and save for lunch over a salad. We also always make sure there is a little container for our Jack Russel, Jake! He just loves Beef Tenderloin – Lucky dog..

Tips: When purchasing your Beef Tenderloin the rule of thumb is 4 – 6 ounces per person. If you know your guests you can figure out how much beef each person will enjoy. Especially if you have other food options. This piece of meat is very tender and should only roast until medium-rare as it will continue cooking while resting. This meat will not taste well if overcooked!

I am not a beef fan - just me. Not for any specific reason; it's more of a texture thing but anyway I decided to make a comfort one pot meal for hubby.  I actually enjoyed this dish with the butternut squash and the sauce was nice and creamy.

Every restaurant we have been to in Tuscany has their own version of a steak tartar topped with rocket salad. Rocket is known as arugula. A nutritious green leafy vegetable and very popular in the Mediterranean. I love using Rocket in salads or even cooking with them. I love when they are young and have just that slight peppery taste

*CHEFS NOTE* If you have difficult slicing the beef very thin, then place wrapped in the freezer for about 15 minutes then slice. If will be much easier to work with to create the perfect thin slices.
