We just love our Big Green Egg and since my husband has made Pulled Pork 3 weekends in a row I decided to change it up for Labor Day weekend and make some ribs!

Here is recipe for the rub! (this recipe is for 2 racks of ribs)

  • 1/4 cup brown sugar
  • 1/4 cup paprika
  • 1 tablespoon chili powder
  • 1 tablespoon kosher salt
  • 1 tablespoon garlic powder
  • 1/2 tablespoon onion powder
  • 1 teaspoon freshly ground pepper

Combine together...  Rub the ribs, wrap and refrigerate overnight.

Cindy's Note:  I made this for 4 of us so I cut the ribs in half to make everyone an individual serving. You can keep it whole or cut it half.  It was also easier for the EGG.  I just love my Simply Organics Spices!

It's Friday night and we are in Massachusetts for December therefore it's all about comfort food in my house. I wanted to use my favorite cast iron pan and make a one pot meal perfect for the 2 of us.  It does take a few steps but I actually served from this pan and the flavors were amazing especially the bacon!

This is a perfect dinner for 2 with maybe some left over for lunch the next day for 1 of you..   Enjoy :)

Chefs Note:  You will find below that I want you to remove the pork at 140 degrees.  You don't want it over cooked and when you continue cooking after adding in the vegetables then let rest a few minutes and slice.  The pork will continue cooking.

I haven't made beans in so long and it seemed to be the perfect side for my BGE Sweet and Spicy Ribs.

Now that I know using canned beans and adding your own ingredients takes on a whole new meaning of baked beans not to mention all you need is 30 minutes.  I made these for my company and never let them know they were semi-homemade and everyone just loved them.  

I used 2 tablespoons of the rub I made with the Ribs.  If you are not making the ribs then here is an easy recipe for the spices.

Ingredients for Spices!

  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon onion powder

Don't you love One-Pot Meals?  I do and this is a perfect Everyday to Gourmet recipe! This is really a combination of a meatloaf and a meatball.

Well my husband was traveling and I invited my girlfriend Lisa over for dinner and I made her a meatloaf.  Well not an ordinary meatloaf but a beautiful Italian Meatloaf and I topped it with smoky thick cut bacon and I made a beef gravy which was perfect.

I made this in my braising pan which looked absolutely beautiful.

Everything can be made in one pot!  Enjoy

Wow I was thrilled on how great this dip came out for us!  As many of you know we spend the summer at our lake house in Massachusetts and we often get pop-in company!  Luckily I never fret and always have basic ingredients (and a little extra) for these weekend.  As avid entertainers I can quickly come up with something to serve my guests and luckily I had a few pieces of bacon left from breakfast and this appetizer was a great hit!  

We  had a little rain storm and enjoyed appetizers inside with our wine and when the weather cleared we grabbed our glasses and came outside.  Next thing we hear this noise and as we look over Jake is on the table eating the rest of the dip!  OMG he has never done that before and of course we all just laughed.  Oh Jake....   We love you...

Enjoy this paleo recipe and if you don't have kale use spinach or even arugula!  I have and it's great!

My husband and I just love going to Cancun, Mexico.  It has become one of our favorites and last minute get-a-way.  The first time I ever had bacon in a glass was at Harry's Prime Steakhouse.  When you sit outside in the bar area they set down a tall glass full of bacon pieces.  How cool is that!  I make it at home now for the kids and they just love it.

We have a weekly "bring a friend to dinner" and I thought this would be a great idea for a champagne glass set at the kitchen table and not to mention a conversation starter!  

These are so easy and so yummy but the only caution is my oven got a little smoked up from the maple syrup so light up a candle!

I love quiche and making this is a medium sized spaghetti squash are perfect for 2 couples to share.  There is nothing better as we sit outside enjoy the morning breeze watching the palm trees lightly swaying and sipping coffee.   Life is good!

I just love baking for Jake! Soon there will be two that will be enjoying healthy snacks from mom! These are so healthy and delicious for your pup..
