I was watching the foodnetwork and Bobby Flay was making this recipe and OMG it looked so good but I wanted to make it a little healthier so this is what inspired me.  I just LOVE shallots and OMG was this side dish amazing. I served it with my Stuffed Turkey and enjoyed this dinner with my lake neighbors and hubby.  

My husband pared this dish with our favorite Peju wine!

Cindy's Note: You can make the shallots up to a day in advance and just store in the refrigerator until you made the spinach and kale.  (that is what I did)

We are a very social couple and many times we have last minute dinner parties. Luckily I had all of the ingredients handy and created this delicious salad and again it looked gourmet but took me under 10 minutes to prepare!

*CHEFS NOTE* If you are at your local fish market and smoked salmon is on sale then pick up a little extra then divide and freeze for later! I love surprising my husband with a smoked salmon and scrambled eggs breakfast after a long business trip!

This recipe was inspired by my love for artichokes! As I was creating this cookbook, these rolls just came together and was not on the original recipe list! I was very surprised that it came together so well and the first bite was breath taking. Go ahead and make these but beware it is hard to stop eating them!

This is a quick and easy appetizer. If you keep frozen cooked shrimp in your freezer, just take it out the night before or if you need it sooner just add the bag in a bowl of cold water! Don't we all have sriracha in our refrigerator?

Every restaurant we have been to in Tuscany has their own version of a steak tartar topped with rocket salad. Rocket is known as arugula. A nutritious green leafy vegetable and very popular in the Mediterranean. I love using Rocket in salads or even cooking with them. I love when they are young and have just that slight peppery taste

*CHEFS NOTE* If you have difficult slicing the beef very thin, then place wrapped in the freezer for about 15 minutes then slice. If will be much easier to work with to create the perfect thin slices.

This recipe was an experiment with zucchini and leeks that I had handy in the house and I was extremely impressed with the wonderful flavors. I hope you enjoy this soup as much as we do in our house.
