Balsamic Braised Short Ribs

My husband loves short ribs and every time we go out to dinner and they are on the menu he wants to try them - just to check if they are better than mine!  I really wish he would stop doing that because he is always disappointed!  I try to tell him to order something else but he never listens...   

I have another great short rib recipe but made this one a little different and we really liked the balsamic glaze.

Tip: Buy a little extra as they are even better the next day!  Also, when at the butcher I like then a little smaller as they fit in the pan better.  If they only have the longer short ribs just ask them to cut in half and will gladly!

Since we are only in Massachusetts for a few weeks; I am trying to use up everything I have before we go back home to Florida.  I made my Crepes recipe that has been carried down from my Grandfather but if you want to use Paleo Crepes - Go here for my Paleo Recipe.

The banana cream does taste like the batter for your bread!  So yummy...

Braised Italian Chicken and Vegetables

I was at our local Whole Foods staring at the meat case poultry.  I decided to get 2 bone-in chicken breast, 2 bone-in chicken thighs and 2 hot chicken sausage (for some heat).  I grabbed a bunch of vegetables and got home and started to cook.  I really didn't  have a plan and this recipe was created.

Feel free to add more ingredients to feed a family. This is a perfect recipe for 2. 

I roasted some chopped red potatoes and added them into the pot before serving.  I knew my husband would wants some carbs in the dish.  Totally optional.

A new butcher moved into town and it figures we are moving!  Glad we were able to try their American Lamb Shanks.  OMG this was an amazing dinner and we share this recipe with our friends Mike and D!

OMG is my first reaction!  I love chicken saltimbocca but you need to make it and eat immediately and I decided to make it an entire day in advance and this was simply amazing.

My husband does not like the word meatloaf!  However every time I make him one he loves it including this recipe.  I used all of the ingredients as my Chicken Saltimbocca but used ground chicken.  Enjoy this delicious Paleo dish today (or tomorrow).  

As you can see from the photo I made 2 individual loafs and it was perfect.  You can make just one or even 4 mini loafs!  You pick..

I just love serving any meal or dessert in a beautiful dish.  I just love these mini cocette's.  When I handed everyone their little Paleo Coconut Crème Brûlée we actually had a moment of silence!  

PS - I even gave Jake a spoonful and his tail was wagging like crazy!  Happy dog - Happy life...

Caponata is a Sicilian dish that was always served as an appetizer.  You can dice it very small and use a dip with endive leaves or prepare chunky.  It is a great accompaniment to many dishes such as a grilled swordfish or over roasted chicken.

We only eat corn late summer when it's tender and sweet.  At the lake house we entertain often and preparing this dish in advance was a great way to feed a crowd while enjoying local summer corn!  We loved the spice from poblano and jalapenô peppers!  

Go ahead and give this a try.  If you can't find local fresh corn then use frozen corn.  (I actually added a frozen bag of white sweet corn as 4 extra friends were coming over and I was afraid there would not be enough).

I am using ground turkey in this soup. It makes it so light and perfect! As an Italian family we love meatballs anyway we can get them! They are amazing in soup...  

Chefs Note:  Freeze in individual containers and just warm up when you are looking for something to enjoy next week!

This was certainly the hit of the party!  I served this Paleo Pasta Primavera with my Paleo Pork Roast Loin and it disappeared right in front of me!

I just love my one-pot recipes!  Especially when I cook in a beautiful pan then serve form it as well.  You get to scoop up all of the extra flavors.  

You can add any potatoes (sweet as well and just chop them up) but the colorful baby potatoes just looked to amazing and I couldn't pass it up.  Hubby really enjoyed this meal after a long trip to NYC!

Oh and before I forget - This is also a 30 minute meal and a perfect dinner for 2!

We love lamb and I normally always get it at the local butcher.   A few of our friends raved about the lamb at Costco so we decided to give it a try. OMG we were very impressed by the quality and flavor of the lamb.  We will defiantly get it again!
