My husband and I were in Palm Beach and went to Travini Ristorante for dinner sitting at the bar.  We just loved the summer menu which was a prefix meal for $30.  It included an antipasti, main course and of course an Italian dessert.  The bartender recommended the Sole Francese and it was perfect.  

The dish just came with a satisfying piece of sole with sauté spinach.  OMG it was simply amazing. Then I did have the lemon flan for dessert!  Perfect dinner with my wonderful husband.

During Blizzard Colbie I was home making a bunch of new recipes and after reviewing what I had in the freezer it was exciting to find a container of mini-meatballs and sauce that I made a few weeks ago. I always make extra meatballs and freeze some for later.  This came it very handy.

We were inviting some neighbors over and we all love spaghetti squash and since we were doing a buffet style dinner I decided to do individual servings of spaghetti squash with a mini-meatball nestled inside and it was a hit!  Our friends son Austin took the rest home!  I just love cooking for friends and family.  Make me so happy..  Not to mention we love having company and there were a few bottles of wine opened and the fire was going.  Then we all enjoyed watching our dogs playing in the snow!  

I am thankful and grateful everyday for all of the wonderful people in our lives.

Puttanesca is a Southern Italian cuisine tomato sauce typically containing olives, garlic, capers, hot pepper, and anchovies mostly served with pasta but goes great with grilled chicken!

**Cindy's Tip!--You can bake the spaghetti squash ahead and before serving, toss the spaghetti strands in a sauté pan with olive oil to heat through!**

I recently cooked for over 100 people at Sons and Daughters to benefit Place of Hope.  One on the dishes included my Tuscan Burgers from my Cookbook Paleo Italian Cooking.

I had ordered plenty of Spaghetti Squash from Mr. Greens and made these amazing sliders!

You can also make them full size to fit your burger.  Cooking them in coconut oil gave them extra flavor.

Chefs Note!  If the squash batter seems to have a lot of liquid just add in more tapioca flour. Just a tablespoon at a time!

Last night I made Chicken Scarpiello and packed up the extra chicken and chicken sausage and made this dish.  I will share a recipe for you to cook up chicken if you don't have left overs handy.  Actually, go and pick up a rotisserie chicken. That would be super easy!

We are a very social couple and many times we have last minute dinner parties. Luckily I had all of the ingredients handy and created this delicious salad and again it looked gourmet but took me under 10 minutes to prepare!

*CHEFS NOTE* If you are at your local fish market and smoked salmon is on sale then pick up a little extra then divide and freeze for later! I love surprising my husband with a smoked salmon and scrambled eggs breakfast after a long business trip!

This recipe was inspired by my love for artichokes! As I was creating this cookbook, these rolls just came together and was not on the original recipe list! Braciole is a popular Italian recipe. This meat is cooked all day in a sauce until tender. What a great way to use flank steak to make an amazing paleo recipe for your family or guests! I love to stuff with spinach and roasted red peppers but you can also add fontina cheese to this dish!

I know it's about 85 degrees F and still summer but Chicken Soup sounds perfect today.  I have used Accents Sprouted Rice Trio before and decided it would be perfect in my soup.

Cindy's Note:  I don't like a lot of carrots in my soup so I only added one.  Feel free to add as many as you like as well as celery and onion.  Enjoy..  This soup is so good. Especially because I made my own soup broth.

Every restaurant we have been to in Tuscany has their own version of a steak tartar topped with rocket salad. Rocket is known as arugula. A nutritious green leafy vegetable and very popular in the Mediterranean. I love using Rocket in salads or even cooking with them. I love when they are young and have just that slight peppery taste

*CHEFS NOTE* If you have difficult slicing the beef very thin, then place wrapped in the freezer for about 15 minutes then slice. If will be much easier to work with to create the perfect thin slices.

This recipe was created just because!  It was a little chilly out and I wanted to make soup.  All I had were eggs, spinach, chicken broth and of course my Italian spices.   So yummy....   

At first my husband said; "no thanks" then decided to have a bowl.. Next thing I saw he was licking the bowl.  Really Glenn!  I just wish I had my camera handy...

My Nana and I would stuff Manicotti's for Sunday dinner.  She would love to get them ready in the morning then we would bake them for dinner.  Her and I would mostly eat the inside stuffing. I decided to make the filling as meatballs and they were amazing.  I served over a vegetable primavera pasta.  Super yummy!  Go ahead and enjoy this Italian classic.

Are you looking for the perfect Easter dish?  Then head over to D&D Market in Hartford or Wethersfield, CT.  All of the ingredients for this amazing came from one store!  For this recipe you do need to butterfly the roast for stuffing.  I recommend you asking one of the nice gentleman behind the counter and they would be more than happy to assist and provide you with kitchen twine.

Stuffed Spinach and Ricotta

You can do everything for this meal in one pot! I used my Le Creuset Braising Pan.

During my travel from Tuscany to Rome this dish was on many menus and it did not come with pasta. This is a light and healthy recipe and it is Gluten Free. If you are looking for a paleo recipe version you would have to omit the ricotta cheese and perhaps add sausage, mushrooms or other ingredients and pulse in your food processor.

I recently made these yummy Stuffed Spinach and Ricotta for company upon our return and served as a primi. I was extremely pleased that everyone enjoyed them including one guest that admitted to not liking spinach but I believe enjoyed about 4 balls! That always makes me happy!

I hope you enjoy these as much as we did.

I love to do my shopping at D&D Market! I used store brands for ricotta and frozen spinach which made this meal affordable and delicious!
