Italian Pickled Vegetables

My grandfather had a very large garden and my Nana would wait for him to bring in the fresh vegetables. My Nana and I would take the fresh vegetables and make a bunch of jars and we would serve them on our Sunday dinners along with her antipasti. You can really cut the vegetables anyway you want. I like some slices and others in a stick form (sliced).

My Nana insisted that all of the vegetables except for the cauliflower and artichokes to be the same shape.

I love cutlets!  Sometimes I just want traditional Italian Pork Cutlets.  I top with baby arugula and thinly sliced red onions.  For the dressing I use EVOO and lemon juice.  Then drizzle extra EVOO over the pork and salad.

I make this Italian pulled pork recipe often during the summer at our lake house. I can let it cook all day, shred the pork then keep warm until ready to serve.

Pulled pork is a great Paleo Diet recipe using my Italian ingredients. I like adding the hot sauce to give it a little extra kick!

When I decided to make a Romesco sauce with the red snapper it was a big hit for a little dinner party we hosted during the week.   This entire dish was very easy to prepare yet it looked as if I spent hours getting ready for the dinner!

This is a traditional Paella recipe with an Italian twist. I love creating unique recipes by adding several ingredients and spices to a traditional dish. This is a great “family” meal because you can place the pan right in the center of the table for everyone to serve themselves. Don’t forget to include fresh Italian bread to dip into the pan juices!

If you are in the Hartford area there is only one seafood store you need to visit. All of the fish in this recipe are courtesy of my friends at City Fish, Wethersfield, CT.

Of course I used D’Aprile San Marzano tomatoes from D&D Market – The best Italian Market in Connecticut!

I always have fresh veggies in the house and wanted something different to snack on during the day.  You can make this chunky and top a salad or enjoy a good egg salad sandwich. I chopped mine really small and ate as a dip with my veggies.  Egg salad is good anyway or just grab a for and eat it out of the container.

I created this Italian Stuffed Portobello Mushroom recipes while I was looking in my refrigerator. I had everything needed to stuff this mushrooms. I had made butternut squash earlier this week and had some leftover – They really made this dish extra special… OMG

I should have added zucchini but will definitely do that next time! You can add any of your favorite vegetables.

Squid is very common in Italian cooking.  I am sure you probably slice them and grill but stuffing them really brings them to a new level.  These are great for entertaining!  At City Fish you can ask Telly for a frozen pound of them and you can just thaw over night and enjoy.

This is another great Italian recipe. I am not a huge beef person but like Brociole this Bragoili becomes very tender and delicious. If you are looking for a new and creative recipe give this one a try and it is also follows the paleo diet!

Italian Vegetable Soup

It's very cold here in Massachusetts in December.  I love soup and so does my granddaughter Brooke.  No matter what time of the year it is wr love to make soup.

Since I keep many vegetables in the refrigerator, in the pantry and in the freezer.  Frozen vegetables are so handy.  Don't you get so mad when you buy fresh vegetables and you don't use them for a few days then when you grab them - they are bad!  I HATE wasting food and money.  That's why I keep vegetables I don't use everyday in the freezer.

Now I am not advertising for Bush's but I do love their chili starter beans.  You also use the juice in the can to add extra flavor to your soups or chilis.  If you use "regular" canned beans please drain and rinse before adding to your soups and chilis.

P.S.  Since I haven't been feeling good and sipping on green tea with fresh ginger and tumeric.  I decided to shred some tumeric into the soup as well.  #tumeric

I taught a cooking class in my neighborhood and shared this recipe with the ladies.  Everyone just loved this soup and it was so much fun making while enjoying time and meeting new friends.

I love to combine vegetable and chicken broth but feel free to use one that you prefer.

During the summer we love grilling and we have the best butcher near us.  ED Stearns Meats has everything we need for the summer.  Some of their meats are frozen but you can just call them and they will take them out and have them ready for you.  Also, the butcher will cut your favorite slices of meat right in front of you!

I was at Stearns getting veal chops, pork butt and decided to grab some Lamb Shanks to make this delicious bolognese.  Give it a try!  Very yummy...  I served with roasted cauliflower but you can serve with pasta, polenta or just eat out of bowl and dip your bread!  Enjoy...

These make a perfect appetizer for any occasion. This is a quick yet gourmet appetizer to really dazzle your guests! If you can't find lamb chops ask your butch to cut up a rack of lamb into individual chops. They will gladly do it for you! You can assemble the chops in advance and keep refrigerated until ready to grill.

*Cind's Note* To finely mince garlic, after you peel and chop your garlic continue to finely chop. Take a pinch of sea salt and sprinkle on the garlic. Take the flat edge of your chefs knife and press firmly down to the garlic and rub on the board.

Don't we all love our Thanksgiving Leftovers!  We do in our house and we always make a soup which is always a hit.  Being Italian I love making a bolognese.  I love to add in some of the butternut squash to sweeten up the sauce.  To make this a paleo pasta dish use spaghetti squash which is what I do and it's so good!
