OK big news today!  When I was visiting my friend Teal at Sons and Daughter farm and winery I learned a few things.  First I had an amazing wine sampling then of course I went for my 2 jugs of kombucha.  While I was there her and David took me on a little tour and my takeaway was Yucca Root.  OMG...

Teal brought my a tasting of tapioca pudding their chef made from yucca root and it was the best I ever had.  I just love the texture of tapioca pudding and it was to die for!  Really.....

She also told me that the yucca root made a great thickening agent and also how you make cassava flour.

While I am doing our HewFit Challenge at our gym and the "game" excludes any flours even (almond, coconut, tapioca, etc) so I grabbed a yucca root to make Cauliflower cakes.

This is a perfect side with any dish or add as many vegetables you want to make it a meal.  You can either add your favorite flavor profile; Italian, Asian, Indian, Mexican, etc...   

I love to make a big batch and scoop out servings during the week. Just warm and enjoy (or eat cold)

In our modern age you can now find riced cauliflower in the freezer section and ready to go.  Or you can pick up a head of cauliflower and rice yourself.

I just love meatballs and these are a prefect spring dinner.  I served over sautéed spinach and OMG amazing!

My family loves when I let them know we are having Chicken Parmesan for dinner! It's funny because many times when we go out to dinner my husband will order Chicken Parmesan then say, "that is not as good as your".  I always ask him why he orders it when we both know he won't like it!  

I love my chicken very thin for cutlets and therefore for parmesan.  I hope you love my chicken parmesan.  It's so easy to make your own tomato sauce - here is my recipe!

OMG is my first reaction!  I love chicken saltimbocca but you need to make it and eat immediately and I decided to make it an entire day in advance and this was simply amazing.

My husband does not like the word meatloaf!  However every time I make him one he loves it including this recipe.  I used all of the ingredients as my Chicken Saltimbocca but used ground chicken.  Enjoy this delicious Paleo dish today (or tomorrow).  

As you can see from the photo I made 2 individual loafs and it was perfect.  You can make just one or even 4 mini loafs!  You pick..

This recipe was inspired by Alex Guarnaschelli while i was watching the food network during the Thanksgiving weekend.  I just love cauliflower and have an herb garden which includes parsley therefore this recipe was created!  I also always have canned coconut milk on hand for my smoothies.  

During her segment she suggested the cauliflower be marinated for at least 2 hours.  I marinated for exactly 2 hours.  She said it could be marinated overnight and I don't think that's a great idea because I marinated one overnight at first and the coconut over powered the other favors so this recipe is my #2 cauliflower.

I was home alone for a few days after Thanksgiving and made this for me.  It lasted me several meals and I enjoyed every bite.  My parsley pesto is more like a dressing then a pesto.

This recipe is not only delicious, but beautiful to the eye! Italians do eat with their eyes but if it looks beautiful, we know it will taste wonderful! You can use cod, haddock, flounder, or any other white flaky fish for this recipe. I just love the spinach, garlic, and combination of herbs to make this a perfect dinner!

We have been on the go for all of December and tonight I felt like a comfort salmon dish.  I am starting HEWfit in a few weeks and decided salmon and pasta was a perfect dinner for us.  As an Italian pasta was always a frequent visitor but over the past several years it makes a rare appearance.  When we do eat pasta it's a small amount.  Tonight the salmon will be the star but it will be yummy for us to enjoy!  

Go ahead and give this recipe a try!  I bet it would also be great with spaghetti squash too.

I have found myself to have daily visits to Joseph's Classic Market theses days and creating new recipes.

Not only do we have amazing markets here in Palm Beach Gardens but our farmers markets are spectacular spectacular and only 2 miles from my house each Sunday.  How perfect is that for me!  At the market I always go to Benders tent as they have everything I need and it's fresh.  The prices are great and it's per items so there is no waiting to weigh.  They had cubanella peppers 4 for $1.00.  Of course I got 4 and grilled 2 with our steak dinner.  Looking at the remaining 2 this dish came to me and I served it with sweet potato pasta!  YUMMY Paleo dinner....

Today I made an eggplant bake for a friend and had a few leftovers and thought I would use them up for my dinner. I took all of the ingredients, made 1/2 pound of pasta and dinner was ready in 25 minutes. My sauce had meat, peppers, onions, and mushrooms. You can also use leftover chicken, sausage or vegetables to create this easy yet delicious dish.

Easy Sweet Potato Fritters

I just realized that there are a lot of sweet potato recipes on my blog.  I do love sweet potatoes.

This recipes was inspired by a recent trip to Bolder.  My friend Monica and I went out to lunch and they had these hugs sweet potato fritters on the counter with a marshmallow topping.   We each ate one but OMG they were filling and the topping was really sweet.

I decide to make my healthy (Paleo) version.  My husband just loved these and asked me to save 2 for breakfast with his eggs in the morning.  I even gave one to Jake - of course he just loved it too!

Caponata is a Sicilian dish that was always served as an appetizer.  You can dice it very small and use a dip with endive leaves or prepare chunky.  It is a great accompaniment to many dishes such as a grilled swordfish or over roasted chicken.

My husband was out doing errands on found a farmers market and came home with eggplant.  I love eggplant.  I decided to cook them up francaise style and I made sandwiches with fresh french bread and sliced mozzarella cheese.  Then pressed on as a panini.  Delicious!

I can just eat by drizzling a little EVOO and some fresh basil!  Perfecto....
