Zucchini Pasta Shrimp Scampi

I just love shrimp scampi and making it with zucchini noodles is even more delicious!  Enjoy



  • 1 tablespoon olive oil
  • 1/4 cup yellow onion, chopped
  • 4 cloves garlic, minced (about 3 teaspoons)
  • 1 teaspoon Sriracha Sauce
  • 2 large zucchini
  • 1 cup chicken broth
  • 1 lemon, zest
  • 1 lemon, juiced
  • 1/2 cup freshly grated parmesan cheese
  • 1 pound large cooked shrimp
  • Extra virgin olive oil for drizzle
  • Fresh parsley, for garnish


  1. Using a spiralizer to create your pasta noodles.  Let sit in a colander.

  2. In a large sauté pan over medium heat add olive oil. Once hot add the onion and garlic until soft.  

  3. Add sriracha, chicken broth, lemon zest and juice from half a lemon. Add in the zucchini noodles, salt and pepper and toss around.  Cook for about 2 minutes.

  4. Add in shrimp and let warm through tossing around.

  5. To serve top with parmesan cheese and fresh parsley then serve family style!
