This recipes reminds me of a simple dish my Nana and I would make together. I wish she was still here so I could show her my zucchini recipes. Her and I loved zucchini together and this dish would be a big hit!
Heat large sauté pan to medium high heat. Add oil and let it get very hot.
Add onion and tomatoes to sauté for 3-4 minutes. Add garlic and sauté another 30 seconds. Pour in white wine and stir using a wooden spoon.
Add zucchini tossing around using tongs. Cook for about 3 minutes. Season with salt and pepper.
Add in butter and let melt then top with parmesan cheese and fresh parsley. Serve to enjoy this simple yet flavorful dish!
