Zucchini Noodles with White Wine Sauce

This recipes reminds me of a simple dish my Nana and I would make together.  I wish she was still here so I could show her my zucchini recipes.   Her and I loved zucchini together and this dish would be a big hit!  


  • 3-4 large zucchini, spiralized (set aside in a colander for 15 minutes)
  • 1 large spiralized red onion
  • 2 cups cherry tomatoes, halved
  • 2 tablespoons olive oil
  • 4 garlic cloves, thinly sliced
  • 1/2 cup dry white wine
  • 1 teaspoon sea salt
  • 1/2 teaspoon freshly ground pepper
  • 2 tablespoosn unsalted butter
  • 1/2 cup freshly grated parmesan cheese
  • 1/2cup fresh parsley, chopped


  1. Heat large sauté pan to medium high heat. Add oil and let it get very hot.


  2. Add onion and tomatoes to sauté  for 3-4 minutes. Add garlic and sauté another 30 seconds. Pour in white wine and stir using a wooden spoon. 



  3. Add zucchini tossing around using tongs. Cook for about 3 minutes. Season with salt and pepper. 


  4. Add in butter and let melt then top with parmesan cheese and fresh parsley. Serve to enjoy this simple yet flavorful dish!
