Vinegar Cole Slaw

I don't need the bun! i just love a heaping of pulled pork covered with tangy cole slaw.  I am not a mayonnaise in my cole slaw kind of girl.

  • 1 medium head cabbage, finely shredded
  • 3 cups red cabbage, finely shredded
  • 1/4 cup local honey
  • 1/2 cup white vinegar
  • 1/4 cup extra-virgin olive oil
  • 1 teaspoon kosher salt
  • 1/2 teaspoon celery seed
  • 1/2 teaspoon dry mustard
  • 1/2 teaspoon freshly ground pepper

  1. Use your disk attachment on the food processor to evenly shred your cabbage.  Or use a sharp chefs knife and shred on a wood board.  Place in a large bowl.

  2. Pour honey, vinegar and oil in a small saucepan turn on the stove to a medium. Whisk until it starts to bubble (do not let it boil). Remove from heat then whisk in salt, celery seed, dry mustard and pepper.

  3. Pour over cabbage and toss around using tongs.  Cover and refrigerate until cold. Enjoy.
