Tuscan Seafood Salad

We love the markets in Tuscany. The fresh salads and meats are always available and you can order what you want and enjoy right there with a glass of wine. This is a similar recipe from what we had at the market. The freshness was amazing and the flavors of the seafood marinated together made this a perfect mid day salad


  • 1 tablespoons olive oil
  • 1/2 pound sea scallops
  • 1/4 pound medium shrimp
  • 1/4 pound calamari rings
  • 2 cloves garlic, minced
  • 1/2 cup small capers
  • 1 lemon, juiced
  • 1 small red onion, thinly sliced
  • 1/3 cup extra virgin olive oil
  • 1 tablespoon fresh parsley,finely chopped
  • 1 tablespoon fresh chives, chopped
  • 1 1/2 teaspoon sea salt
  • 3/4 teaspoon freshly ground pepper
  • 1 lemon, quartered to serve with salad


  1. In a large saute over medium high heat, add in olive oil. Once hot, add in scallops, shrimp and calamari rings. 

    Cook for about 4 minutes then remove from heat.

  2. Add garlic in the pan and mix around with a spatula to incorporate in the oil and seafood.

    Let sit for 1 minute.

  3. Place the seafood in a large bowl or platter.

  4. Add capers, red onion, olive oil, parsley, chives then salt and pepper. Stir together, cover and refrigerate for 30 minutes before serving.

  5. When ready to serve, divide into bowls and place a lemon quarter to the side and drizzle with extra virgin olive oil.
