Tuscan Sea Bass

Sea Bass has become one of my top white fish choices ever since I was in Tuscany 2 years ago. Your guests will feel extremely special if you serve them this dish! This is also a Paleo Recipe and Gluten Free! Enjoy…



  • 1 medium yellow onion, sliced
  • 2 pounds sea bass
  • 1 teaspoon sea salt
  • 1/2 teaspoon freshly ground pepper
  • 3 ripe roma tomatoes
  • 2 lemons, thinly sliced
  • 3/4 cup dry white wine
  • 1 bay leaf
  • 1/4 cup olives (ore more)
  • 1 teaspoon dried thyme or fresh
  • 2 teaspoon fresh parsley
  • 1 tablespoon olive oil, plus more for coating pan


  1. Preheat oven to 350 degrees F

  2. In an oven safe dish lightly drizzle the bottom with olive oil.

  3. Gently rinse the sea bass, pat dry then season with salt and pepper on both sides. Place on top of the sliced onions.

  4. Slice the tomatoes and set them around the sea bass.

  5. Add the sliced lemons by covering up the sea bass. Add the wine, bay leaf, olives parsley and thyme.

  6. Bake for 20 minutes. Enjoy every bite.
