Turkey Meatballs and Applesauce

Don't judge the name of this recipe!  It is delicious and I promise you will want to make this over and over again.  It is perfect for your meal prep to enjoy during the week.

  • 1 pound ground turkey
  • 5 tablespoons almond meal or any other GF flour
  • 1 large egg
  • 1 clove garlic, minced
  • 2 teaspoons shallot, finely minced
  • 3/4 teaspoon salt
  • 1/4 teaspoon pepper
  • 1 teaspoon paprika
  • 1 teaspoon cinnamon
  • 1/2 teaspoon cayenne pepper
  • 1 cup unsweetened applesauce
  • 1 tablespoon Dijon mustard
  • 2 tablespoons coconut crystals
  • Coconut oil for cooking meatballs


  1. Add ground turkey to a mixing bowl.  Add in almond meal.  Use a fork and start to press down on the turkey then create a well in the center.  Add the egg and start whisking then slowly start to add in the ground turkey. 

  2. Add in paprika, cinnamon, cayenne, garlic and shallots.  Combine together (just use your hands)

  3. Heat a large pan over medium-high heat.  Add about 1 tablespoon of oil.  Use a small scoop to create each meatball; it helps to keep them all the same size.  Roll in your hands then drop in the pan.  Cook all sides to brown; about  10 minutes.  Remove meatballs from the pan.

  4. Using the same pan over medium heat add in applesauce, Dijon mustard and coconut crystals.  Use a whisk to combine together.  Let cook for about 1 minutes then add the meatballs back in the pan.

  5. Either reduce temperature to low and let the mixture incorporate with the meatballs for about 3 minutes or if meal prepping; remove from the pan into your container to warm and enjoy during the week.
