Turkey Meatball and Vegetable Soup

I love any dish that only needs one pot!  This recipe is Amazing.  I am not just say that so go ahead and give it a try.  You can enjoy this one pot soup over pasta, vegetables or just as is to enjoy.

  • 1 pound ground turkey
  • 1 large egg
  • 1/2 cup almond flour or breadcrumbs
  • 2 cloves garlic, minced
  • 2 teaspoon Italian seasoning, plus more
  • 1 handful of fresh parsley, chopped
  • Salt and Pepper
  • 1 sweet potato, cubed
  • 1 large zucchini, shredded
  • 2 carrots, shredded
  • 1 cup petite peas, frozen
  • 6 cups vegetable broth (or turkey)
  • Olive oil or Coconut oil for frying meatballs


  1. In a large bowl add in ground turkey.  Add in egg, flour/breadcrumbs, garlic, Italian seasonings, 1 teaspoon of salt and 1/2 teaspoon black pepper.  Combine well.  Use a small scoop and create your meatballs.  Set on a plate.

  2. Heat a large pan over medium high heat add in about 2 tablespoons of oil.  Add in the meatballs and cook until all sides are brown; about 7 minutes.  Remove from pan and set aside.  (They are not cooked all the way yet)

  3. Add in more oil if needed.  Toss in cubed sweet potato and cook for about 10 minutes.  Season with a little salt and pepper.  Add meatballs back into the pan along with the shredded zucchini and carrots.  Let cook for about 3-5 minutes.

  4. Pour in broth and let simmer for about 10 minutes.  Add in a little salt, pepper and about 1 teaspoon of Italian seasonings.  Add in peas and simmer for another 10 minutes.  Taste broth for any additional seasonings.


    Note:  Add in some red pepper flakes for a little heat!
