Tomato and Mozzarella Bites

This is a great no-cook summer entertaining recipe.

I love these Tomato and Mozzarella Bites all summer long. They are perfect for guests at our lake house and easy to assembly. Everyone can enjoy their own on their way for a boat ride. And the other hand is free for a glass of wine!

Paleo entertaining at its best…



  • 10-20 grape or cherry tomatoes, whole or halved
  • 20 fresh basil leaves
  • 20 small balls fresh mozzarella cheese
  • 1 teaspoon sea salt
  • 1/2 teaspoon freshly ground pepper
  • 1/2 cup balsamic vinegar
  • 1/4 cup extra virgin olive oil
  • 20 toothpicks


  1. Using a toothpick, spear a half of a tomato, a leaf of basil, a mozzarella ball, and another half of a tomato. Repeat with remaining ingredients.

  2. Place on a serving dish and season with salt and pepper.

  3. Combine vinegar and oil together in a small bowl to serve as a dipping sauce or drizzle before serving.
