Thai Spicy Coconut Soup

  • 1 small shallot, thinly sliced
  • 2 tablespoons fresh ginger, minced
  • 1 tablespoon lemongrass, minced (or 2 teaspoon lemon zest, minced)
  • 1 tablespoon coconut oil
  • 2 cups of low sodium chicken broth (or homemade)
  • 1 can coconut milk
  • 3 tablespoon lime juice
  • 2 tablespoon fish sauce
  • 1/2 teaspoon agave
  • 2 tablespoons heavy cream
  • 1 cup shitake mushrooms, sliced
  • 1/2 teaspoon red pepper flakes, crushed
  • 1 seranno chile, sliced
  • Fresh basil, cilantro or mint for topping


  1. In a large pot over medium heat add the shallots, lemongrass and garlic with a little coconut oil. Just heat do not brown.

  2. Add chicken broth, coconut milk, lime juice, fish sauce, cream and agave.

  3. Simmer for 10 minutes.

  4. Stir in mushrooms, red pepper flakes and chile and continue to simmer for another 7 minutes.

  5. Garnish each serving bowl with your fresh herbs.
