Sweet Potato Waffles

I had a bunch of sweet potatoes on my counter and decided to try this recipe! It was really good and I added dried sage for a little added flavor and it was the perfect waffle!



  • 1 medium size sweet potato
  • 1/2 cup of coconut flour
  • 1 tablespoon baking powder
  • 1/2 teaspoon salt
  • 6 large egg whites, at room temperature plus 2 eggs
  • 1 cup coconut milk
  • 1/4 cup honey
  • 1/4 cup unsalted butter, melted
  • 1 tablespoon grated orange rind
  • 1 teaspoon dried sage
  • Olive oil or Coconut oil, for waffle iron
  • Special equipment: waffle iron


  1. Clean potato and pierce with a fork a couple of times and cover with clear wrap. Put in microwave for 3-4 minutes. Until soft! Let cool, peel, place in a bowl and mash.

  2. In a large bowl, combine coconut flour, baking powder, and salt and set aside.

  3. Using the bowl with the sweet potato combine the coconut milk, honey, butter, grated orange rind and sage. Stir the sweet potato mixture into the coconut flour mixture and thoroughly combine.

  4. In a bowl using an electric mixer beat egg whites until stiff peaks form. Gradually fold egg whites into batter 1/3 at a time. The batter will be thick.

  5. Heat the waffle iron and brush with olive oil or coconut oil. Add a scoop of the mixture to the middle of the iron. Close and let cook (about 4-5 minutes)
