Sweet Potato Puffs

This is a great recipe to use up some of your Thanksgiving leftovers! You can make this recipe by using up all the leftover sweet potatoes and combine it with simple ingredients, which are found in many refrigerators. Enjoy!



  • 2 large sweet potatoes, cooked ( 2 cups)
  • 2 large eggs
  • 1/4 cup goat cheese, crumbled
  • 1 tablespoon rosemary, minced
  • 1 tablespoon coconut milk
  • 2 tablespoons unsalted butter
  • 1 teaspoon sea salt
  • 3/4 teaspoon freshly ground pepper
  • 2-3 tablespoons pecans, crushed
  • Coconut oil, melted for coating tins


  1. Heat the oven to 400°F and lightly brush the cups of a regular muffin tin, or a mini-muffin tin with coconut oil.

  2. In a large mixing bowl add cooked sweet potatoes and if they are not mash then do that now with a fork.

  3. Add eggs, goat cheese, rosemary, coconut milk, butter, salt and pepper. Combine all ingredients together.

  4. Put a spoonful of the mixture in each muffin cup. Bake for 20-25 minutes, or until the sweet potato cups are set, browned on top, and hot through and through.

  5. Remove and enjoy immediately.

    Note: If this is not a leftover recipe then here are 2 ways to prepare your sweet potato:  Clean them first!


  6. 1. Bring a large pot of water to a boil. Add 1 tablespoon of sea salt then add potatoes in pot. Cook for 15-18 minutes until fork tender, drain.

  7. 2. Poke a few holes in the sweet potato. Line your microwave with parchment paper then set for 5 minutes.  Perfect sweet potatoes.
