Every afternoon around 3pm I enjoy a cup of tea. I was looking around the pantry for something to eat with my tea and came up with these muffins. Keeping a stocked pantry comes in handy when you want a healthy muffin.
Preheat oven to 350 F
In a large mixing bowl, combine almond flour, coconut sugar, baking soda, baking powder, sea salt and cinnamon together using a fork.
In a medium mixing bowl whisk eggs then add in sun butter, coconut oil to combine well
Add egg mixture into the dry ingredients to incorporate well. Then fold in macadam nuts.
Line your muffin tins with paper then divide the mixture for 8-10 minutes (depending on the size of your tins)
Bake for 15-18 minutes
