At the lake we always have a lot of fruit to make salads, desserts or to just cut up and put out when we have company. (which is a lot). For some reason both my husband and I picked up 2 one pound packages of strawberries.
I try to do an inventory check in the refrigerator a couple times a week. Don't you hate when good food ends up in the back of the refrigerator and it goes bad. I certainly do!
This weekend I think strawberry short cake will be a great dessert for our family get-together and we will pick up fresh strawberries but to keep the ones we have and before they go bad I thought about making a jam to preserve them. Since there are 2 apples in the refrigerator draw I will be incorporating them as well.
Add sugar, lemon zest and juice in a medium saucepan over a low heat. Stir until the sugar dissolves (do not leave the stove). About 8-10 minutes.
Add in apples and strawberries while keeping on the low temperature. Stir together and cover to cook for about 20 minutes.
Use a ladle and divide into glass jars. Seal and keep refrigerated until ready to use within 3 days.
