Steak and Avocado Salad

When round 2 was a salad I knew this would be my dish.  I am not a big steak fan but on a salad with avocado then a side of spicy guacamole.  This recipe just had to take me to the 3rd round.  Thanks again to everyone who voted for me!

 

Ingredients

  • 1 tablespoon unsalted butter
  • 2 (4 ounce) filet mignon
  • 1 teaspoon sea salt
  • 1/2 teaspoon freshly ground pepper
  • 4 cups mix greens
  • 1 cup baby arugula
  • 1/2 cup thinly sliced red onion
  • 10 cherry tomatoes, halved
  • 1 cucumber, chopped
  • 1 orange or yellow bell pepper, sliced
  • 1 ripe avocado

  • Ingredients for the Red Wine Vinaigrette
  • 1 tablespoon shallot, diced
  • 1/2 cup red wine vinegar
  • 1 lemon, juiced
  • 2 teaspoons raw honey
  • 1 1/2 teaspoon sea salt
  • 1/2 teaspoon freshly ground pepper
  • 1 cup extra virgin olive oil

  • Ingredients for the Spicy Quacamole
  • 1 ripe avocado
  • 1 tablespoon red onion, diced
  • 3 cherry tomatoes, chopped
  • 2 teaspoons jalapeno, diced
  • 1 lime, juiced
  • 1 teaspoon paprika
  • 1/2 teaspoon sea salt
  • 1/4 teaspoon freshly ground pepper

Directions

  1. Heat an indoor grill pan (or on the outside grill) and add butter to melt and get very hot.  Season both sides of the filet mignon with salt and pepper.  Grill each side of beef for 3 minutes then remove from heat and let rest.

  2. In a large bowl add in mix greens and baby arugula then toss together.  Add red onion, tomatoes, cucumber, bell pepper, garbanzo beans and olives to create a salad.

  3. Slice each steak into slices.  Either down the middle of your salad or around the edges place the steak slice then avocado slice and continue until finished.  If you need more then slice the other half of your avocado from Mexico.  If you have some left just chop and add to the salad.

  4. In a small bowl add shallots, lemon juice. honey, salt and pepper then whisk until combined.  Continue whisking and drizzle in extra virgin olive oil.  Pour over salad.

  5. To make your spicy avocado slice open the avocado, remove the pit and chop in a bowl.  Add in red onion, tomato, jalapeno, lemon juice, paprika, salt and pepper.  Combine well using a fork then place in the skin of the avocado and place on the side of the bowl to complete this salad!  Enjoy
