Spinach and Herb Quiche

Quiche is a very popular and versatile dish. It can be prepared for any meal. This is a family recipe that was handwritten on an index card! Every now and then, I add a few additional ingredients, but the original is always a big hit.



  • 1 green bell pepper, chopped
  • 1 small yellow onion, chopped
  • 1 medium zucchini, chopped
  • 1 1/2 teaspoons minced garlic
  • 3 tablespoons olive oil
  • 8 large eggs
  • 3 cups shredded cheddar or Swiss cheese
  • 1 teaspoon sea salt
  • 1/2 teaspoon freshly ground pepper
  • 1 teaspoon dried basil
  • 1 (10-ounce) package frozen spinach, chopped and drained well
  • 1/2 cups parmesan cheese, grated


  1. Sauté the peppers, onions, celery, zucchini, and garlic in hot oil. Beat the eggs and combine with the cheese and seasonings.

  2. Add the spinach and parmesan cheese to the egg mixture and combine with the vegetables. Mix well.

  3. Bake in a 10-inch quiche or pie pan for 1 hour or until firm in the middle. Cool for a few minutes before serving.

  4. Note: You can either serve this as pie slices or cut it into squares.
