At the lake during the summer we love grilling. Using our Cast Iron pan makes it easy to grill anything. One large sweet potato was perfect for my husband and I as it made 6 cakes. Just double or triple to make more.
Heat your grill (if grilling outside) Or skip this if frying inside!
Peel sweet potato then cut 1 inch thick. Add water to a sauce pan then add in potatoes with 1 teaspoon of salt. Bring to a boil and cook potatoes until fork tender.
Add cooked potatoes in a bowl then add in brown sugar, salt, pepper, chili powder, paprika and onion powder. Use a potato masher or fork to completely combine.
If grilling add your cast iron pan on the grill to get it very hot or stove-top heat over medium-high heat. Once the pan it hot add in oil. Let the oil get very hot.
Use an ice-cream scoop or tablespoon and add to hot pan. Use the back of the spoon to lightly flatten into a cake. Cook each side for about 3-4 minutes.
