Spicy Sweet Potato Cakes

At the lake during the summer we love grilling.  Using our Cast Iron pan makes it easy to grill anything.  One large sweet potato was perfect for my husband and I as it made 6 cakes.  Just double or triple to make more.

  • 1 large sweet potato
  • 1 tablespoons light brown sugar
  • 1 teaspoon kosher salt, plus more
  • 1/2 teaspoon freshly ground pepper
  • 1 teaspoon chili powder
  • 1/2 teaspoon smoked sweet paprika
  • 1/4 teaspoon onion powder
  • Coconut oil or Olive oil for frying

  1. Heat your grill (if grilling outside) Or skip this if frying inside!

  2. Peel sweet potato then cut 1 inch thick. Add water to a sauce pan then add in potatoes with 1 teaspoon of salt.  Bring to a boil and cook potatoes until fork tender.

  3. Add cooked potatoes in a bowl then add in brown sugar, salt, pepper, chili powder, paprika and onion powder.  Use a potato masher or fork to completely combine.

  4. If grilling add your cast iron pan on the grill to get it very hot or stove-top heat over medium-high heat.  Once the pan it hot add in oil.  Let the oil get very hot.

  5. Use an ice-cream scoop or tablespoon and add to hot pan. Use the back of the spoon to lightly flatten into a cake.  Cook each side for about 3-4 minutes.

  6. Enjoy!
