I love left overs and especially during our Hewfit challenge I am hungry more often.
Last night I made Chicken Scarpiello and packed up the extra chicken and chicken sausage and made this dish. I will share a recipe for you to cook up chicken if you don't have left overs handy. Actually, go and pick up a rotisserie chicken. That would be super easy!

Preheat oven to 375 degrees F. Line a baking sheet with parchment paper. Lay the chicken and sausage on the pan. Season the chicken lightly with salt and pepper. Roast for 25 minutes. Remove from oven and let cool. Pull apart chicken and slice sausages.
In a large sauté pan over medium-heat add in 2 tablespoon oil. Add in broccoli and let cook for about 3 minutes. Add in tomatoes, cherry peppers, jalapenö peppers and garlic. Let cook for 3 minutes. Add in chicken and sausage.
Spiralize your squash.Then toss into the pan. Drizzle a little (1 tablespoon) of extra virgin olive oil and use your tongs to combine all of the ingredients together. Season with Italian Seasonings and a pinch of salt and pepper. Add in butter or ghee.
Let cook for about 2-3 minutes then serve and enjoy!
