Making these little nests really another layer to stuffing. I even poured some gravy on these little bundles and it was amazing!
Note: I used 1/2 pound of ground turkey and 2 spicy turkey sausage (casings removed. This gave the nests a little zest of flavor. If you are using only ground turkey then consider adding a little red pepper flakes.
Preheat oven to 400 degrees. Take the spaghetti squash and poke about 10 holes using a metal skewer. Place on a baking sheet and roast for 35 minutes. Let cool, slice in half, remove the top layer and seeds. Use a fork and remove strands and place into a large mixing bowl.
Reduce temperature to 350 degrees F.
Note: If you want to speed up the process. Poke the holes in your spaghetti squash. Set on a microwave safe dish and microwave 6-8 minutes. Follow about after cooling.
In a large sauté pan over medium heat add butter to melt. Add in onion, garlic, celery and garlic. Cook for about 7 minutes tossing occasionally using a wooden spoon. Season with 1 teaspoon of salt and 1/2 teaspoon of pepper.
Add the ground turkey/sausage to the pan and break apart while cooking. Sauté for about 8-10 minutes or until cooked thoroughly. Season with poultry seasoning and sage. Toss into the mixing bowl with the squash. Whisk egg in a small bowl then combine into the mixture.
Season mixture with a 1/2 teaspoon of salt and pepper. Combine ingredients together.
Brush each muffin with with oil. Divide mixture into each muffin and bring it to the top of each using tongs. Bake for about 30-45 minutes; depending on the size of the tins. The tops should be golden brown. Let sit for 5 minutes then take a butter knife and run around the muffin to easily unmold. Serve on a platter with gravy. Enjoy
