Slow Cooker Chile Verde

This recipes is so yummy and the perfect comfort food. I served with riced cauliflower and topped with a little coconut oil.  

It’s so easy to make cauliflower rice!


  1. Take a head of cauliflower and rinse under cold water then set in a colander to dry.
    Use either a cheese grater or the attachment for your food processor to create your rice.
  2. Take about 2 tablespoons of coconut oil and heat a large sauté pan over medium heat.

  3. Add about 2-3 cloves of minced garlic then top with the riced cauliflower.  Season with salt and pepper and sauté for about 5-6 minutes string gently with a wooden spoon to coat the garlic and seasoning.

  4. Go ahead in add in any of your favorite seasonings, herbs or vegetables to cauliflower rice!
