Slow Braised Pork Ragu

Ragu is a family favorite and there are so many variations. I love this recipe using a pork shoulder to create an amazing pork ragu. You can make this delicious Italian and Paleo recipe in the slow cooker or the stove top! If I am home for the day I like to have it on the stove top but… gone all day and want an amazing ragu! Use the slow cooker.. Recipe below.

  • 2 pounds pork shoulder roast, cut into cubes
  • 1 teaspoon dried rosemary leaves, crumbled
  • 1 teaspoon dried thyme leaves
  • 1 teaspoon ground black pepper
  • 1/2 teaspoon salt
  • 2 tablespoons olive oil
  • 1 onion, diced
  • 1 carrot, diced
  • 3 cloves garlic, minced
  • 1 (28 ounce) can diced tomatoes
  • 1 cup chicken stock
  • Equipment – slow cooker

  1. Set slow cooker to medium heat, add 1 tablespoon of olive oil to the bottom.

  2. Season pork with the rosemary, thyme, pepper, and salt. Heat a large skillet and add 1 tablespoon of olive oil.

  3. Set pan to medium/high and sear all sides of the pork roast. About 2 minutes each side. Take out of pan and place in the slow cooker

  4. Add onion, carrot, and garlic, diced tomatoes and chicken stock.

  5. Cover and let the slow cooker do the work. Set for 4 hours on low/medium heat.
