Don't go for the jar sauce! Here is a simple tomato sauce to make tonight.
Heat a sauce pan over a medium temperature. Add in oil then carrots and shallots. Let cook for about 3-4 minutes stirring often using a wooden spoon. Add in garlic and cook for another minute. Remove from heat.
Add mixture into a blender or chopper along with 1 tablespoon of sauce and puree. Add to the pan along with the sauce over medium-low heat. Season with salt, pepper and thyme. Stir then cover and reduce to low for 20 minutes. Taste for any additional seasonings.
