Simple Tomato Sauce

Don't go for the jar sauce!  Here is a simple tomato sauce to make tonight.




  • 3 tablespoons olive oil
  • 1 carrot, finely chopped
  • 1 shallot, finely chopped
  • 4 cloves garlic, diced
  • 1 28-ounce can tomato puree (san marzano)
  • 1 1/2 teaspoon sea salt
  • 1 teaspoon freshly ground black pepper
  • 2 teaspoons dried thyme


  1. Heat a sauce pan over a medium temperature.  Add in oil then carrots and shallots.  Let cook for about 3-4 minutes stirring often using a wooden spoon.  Add in garlic and cook for another minute.  Remove from heat.  

  2. Add mixture into a blender or chopper along with 1 tablespoon of sauce and puree.  Add to the pan along with the sauce over medium-low heat.  Season with salt, pepper and thyme.  Stir then cover and reduce to low for 20 minutes.  Taste for any additional seasonings.
