Scallop Scampi with Greens

This Scallop Scampi and Greens recipes was inspired by greens I had in the refrigerator and scallops I spotted at my fish market. I sometimes go into the fish store not knowing what I want but decide last minute when I spot seafood that may go with something I already have in my refrigerator.

This ended up being an amazing dinner but I forgot to take a picture of the final product. I guess I was so excited to eat it.. Next time!!



  • 1/4 cup olive oil
  • 1/4 teaspoon red pepper flakes
  • 1 pound sea scallops, muscle removed
  • Sea salt
  • 1 teaspoon dried parsley
  • 1 garlic clove, minced
  • 2 tablespoons shallot, diced
  • 3 tablespoons dry white wine
  • 1 bag (10 ounces) fresh baby spinach
  • 2 cups kale, chopped
  • 1 tablespoon Italian (flat leaf) parsley, chopped
  • 3/4 teaspoon freshly ground pepper


  1. In a large sauté over high heat add oil and the red pepper flakes and let it get hot that it almost starts to smoke.

  2. Take the scallop (muscle removed) and season both sides with salt and dried parsley. Carefully place each shrimp in the hot pan. Make sure you are careful and place the scallop away from you so you are not splattered by oil. Let cook for about 2 minutes. **Do not move the scallop; you want a nice sear on it. Flip over and let cook for 1 minute. Remove from pan and set aside on a plate.

  3. Lower sauté pan to medium add in garlic, shallots and let cook for 2 minutes. Add in wine, spinach and kale to the pan and cook until the leaves start to wilt. About 3 minutes. You may want to add about 1 teaspoon of sea salt. Add in parsley.

  4. Add scallops back into the pan for about 3 minutes until they are fully cooked.

  5. Move into a serving plate and enjoy!

    Note: This dish makes a great dinner or divide out for an appetizer!
