Sautéed Vegetables Italian Style is the perfect side dish for your favorite seasonal vegetables. I love serving this with a grilled steak or seafood. Sometimes I turn it into a main course using all of my left over fresh vegetables at the end of the week! Be creative…
Chop zucchini, yellow bell pepper, green bell pepper, onion
Heat olive oil in a large sauté pan, over medium-high heat. Add zucchini, peppers, onion, and garlic.
Season with salt and pepper and toss. Next add in parsley, basil, thyme and if you decide to use red pepper flakes. Cover and let cook for 5 minutes.
Add in can tomatoes and bring to a boil. If using whole tomatoes; break apart using a wooden spoon. Lower to simmer and cook until the tomato juices reduce.
Taste for additional seasonings, serve with your favorite main course.
Note: You can turn this side dish into a main course by adding cooked pasta or spaghetti squash. Just toss in vegetables and enjoy!
