Sauté White Fish and Greens

Meal preparation is easy if you are organized.  I love to make a few meals for the week and have them ready to pull out of the freezer in the morning and just warm to enjoy for dinner.

This recipe is perfect.  I just lightly brown both sides of the fish and slightly cook my greens.  I store in the refrigerator to enjoy within a day or 2 them just warm up in the pan for an easy dinner.  

It's really fun to be healthy!

Ingredients

  • 1 pound white fish (snapper)
  • Olive oil
  • Salt and Pepper
  • Italian seasonings
  • 1 clove garlic, minced
  • 1 shallot chopped
  • 1 bunch of greens (kale or Swiss chard)
  • 1 lemon, zest and juice

Directions

  1. Lightly season your fish with salt and pepper.  

  2. Heat a large sauté pan with about 2 tablespoons of oil.  Add fish in pan and season the top side with Italian seasonings.  Cook for about 2 minutes then flip over.  Season the other side with Italian seasonings.  Cook for another 2 minutes.  Remove from pan and set on a plate.

  3. Add a little more oil in the pan (about 1 tablespoon).  Add in garlic and shallot; cook for about 30 seconds.  Add in greens and lower to medium heat and cook for about 2 minutes.  Just until they are about to wilt.

  4. To enjoy now add fish back in the pan and cover for 6-7 minutes on simmer.  Top with lemon zest and lemon juice.  Serve and Enjoy!

  5. For Meal Prep: Put the greens and fish in a sealable container in the refrigerator.  When ready to enjoy just heat a large pan and add in oil or water (about 2 tablespoons).  Add in greens and fish.  Let heat for 6-7 minutes over medium-low heat.  Add lemon zest and lemon juice to enjoy!

    *Can be store in the refrigerator for 2 days.
